If I was you I would stick to the keto and up your fats. You’ve found something that works for your BG which is omitting most carbs so why would you want to add them back into your lifestyle?
I’m not at my goal weight, probably never will be but I have done low carb for 9 years then another 6 on keto, it’s a way of life. What stalls my weight loss or even makes me gain is when I get a bit too generous with the fats, especially dairy as in cheese, cream & butter. I don’t avoid fats but don’t add a lot either, I just eat a normal amount of fat. Maybe adding more fats in for you would have the same effect
