There are only the options of putting on fat or muscle (or both together). The only way to build muscle is to do a weights program, whether at home or a gym. Walking wont do it, nor running.I’d think it was the 6 miles of walking as your dawn phenomenon wore off that counteracted the banana rather than the banana being fine. See what happens if you eat it in the afternoon without the walking , my money is on a much worse outcome bgl wise
Also not sure how it’ll help you gain weight if you burn it straight off. I guess at least it’s not body fat your burning this way maybe.

Also consider if there is an underactive thyroid, this causes all sorts of problems.
I’ve avoided Bananas like the plague since DX in June, I tried ripe ones back then and they really spiked my BG. Today i tested at 9am and got a reading of 9.6, I’m always high in the morning. After egg n bacon at 9, at 10.15 I ate a yellow, nearly ripe (tasty and sweet but firm) Banana. It was divine. I then walked about 3 miles and less than 2 hours later was still at 8 and 3 hours later and 3 more miles was down to 6.6.
What experiences have you had with resistive starch?
My next experiment will be not fully cooked potatoes.
BTW this is all in an effort to try and put weight on.

The carbs vary depending on the weight of both banana and apple but will be approximately 50 to 55g of carbs. my blood sugars are averaging at 5.8 before meals and 6.8 after meals. The smoothie is homemade and is delicious!

Your liver/pancreas team are obviously working well but surely pushing them like that is a bad idea. If eaten the fruit raises your BG more slowly and is less likely to bring on diabetes?

ManicCarbCounter has Type 1 Diabetes. Hence he/she can have a normal diet of choice plus insulin.

If you want to build muscle, you may consider high intensity interval training.
Walking will build stamina, but it won't pack on the bulk.
The appeal of HIIT is (for me) that it doesn't take much in the way of time, and it is enough to only do a very few minutes. I got myself a kettlebell (aka as The Doorstop) and a few simple kettlebell excercises (less than 10 mins twice a week), done with concentration and 'to failure' made huge improvements in an astonishingly short time.
Of course, then I injured my back again stepping badly off a kerb, and it went back to being The Doorstop.
Really should start it up again.
