Rice substitute?

Thank you all for your replies- I have lots of ideas for my dinner tomorrow now! Hadn't thought of frozen cauli but that will be quick and handy after work
 
Have you tried the cook n cool method and then tested to see if the spikes are lower? I experimented and found that using this method I could have a very small portion of basmati rice without too much of a spike.
I am going to give this a try reheated rice, I am having some good results with reheated pasta.

I cannot remember if TMIAD Mosely did rice in his experiments though.
 
I like cauliflower rice with drier stuff but if I'm having a curry or something with a bit more sauce I find the cauli rice gets lost in the sauce and everything becomes a bit samey so I like to to use frozen green beans on these occasions as they stay separate from the sauce better. Also use shredded cabbage and spiralized veggies.

The konjac noodles and rice give me a really bad stomach and bung me up something terrible irritating my diverticulitis so I avoid them

Always dry fry anyway but thank you it's a good tip :) - sometimes I do cauliflower bajee but like to marinate it first and often forget
 
I really love cauliflower rice simply raw. I make a sauce of coconut milk, with garam masala, salt, a bit of olive or sesame oil, some extra curry or curcuma powder to taste, and a bit of raw ginger and a few drops of lemon juice. Easy to make and it keeps a few days in the refrigerator.
 
Microwaved cauliflower rice (pre-prepared from supermarket) - bitter, yuk.
Rapidly stir fried in a little oil, chilli and garlic - tasty!! Added lentils and kidney beans = main course with stir fried greens!
 
I just cook some cauliflower florets and bung my curry , Bolognese etc onto cos I am lazy!! Also I don't like to pretend that things are not what they are . Rice is rice and cauli is cauli

I do the same, @carty , when I can't be bothered to use and wash up the food processor!

I don't pretend my caulirice is rice, though. I love it for what it is!
