roast peppers

I am after a bit of help and advice! Mr Aqua is away overnight and I have to cook tea. I have some cooked mince left over from last night so thought I would make cottage pie for the boys. I have broccoli and cauliflower so could make the same for me but I also have some yellow peppers. I thought I could be adventurous and make stuffed peppers.

Do I cook the peppers first or cook peppers and mince together? How long for and at what temperature?

I am hopeless at cooking so this could end in disaster!
 
There are many different approaches. Some people cook the filling, microwave the pepper to soften it, then add the cooked filling and then pop into the oven for 10 mins. Others, if it has a rich sauce, put it straight into the oven for 25 mins. Whatever you do, it's important to have the filling cooked, the pepper just needs to be soft, but still firm enough to hold the filling.

Here is a recipe for roast peppers stuffed with mince. In this one, rather than start in a microwave, they soften the pepper in the oven using olive oil, cook the mince separately, add it then to the softened pepper and then finish off with ten mins in the oven.

If the beef filling is cooked, it won't be a disaster. That's the benefit of cooking the filling separately. The worst that can happen is that the pepper gets a bit burned but, if you keep an eye on it, you can take it out of the oven early. It will be soft and the mince is already cooked anyway.

Thank you for that. I have alot of cauliflower and broccoli that needs using up so it could be pepper stuffed with cauli/broccoli mash!

That definitely needs cooking separately but, wen nearly cooked, you could stuff the pepper with it and mix in some grated parmigiano. Both cauli and broccoli go well with cheese. You could even grate some cheddar on the top before you put it in the oven. Maybe a little finely chopped onion in with the cauli/broccoli mix.

Sounds like a nice dish to have whilst watching TV.

HI,interesting stuff,have you tried peppers roasted in the oven,just noticed what I've written,where else would you roast,except
for an oven,anyway back to the peppers.I stuff them with brown rice mushrooms and a bit of spice,to brighten it up!!
I tried building it with cuss cuss,YUK dreadfull.Richard
