Salad ideas

salads don't really appeal to me.
I usually choose hot food instead, but I am very aware of the benefits of fresh, raw, rainbow saladings. :)
But they are so often cold, clammy and boring.
Especially in the colder months!

But I would like to eat more (low carb) salads, so I was wondering if you had any mouth watering suggestions...?
 
Mix up a home made spicy mayo and toss your salad in this. Your cucumber, lettuce, peppers and tomatoes all become so much more exciting!
 
Great question

I have slices of turkey breast (herb and hint of infused mustard) warmed in microwave, then buttered in avocado and then between loads of lettuce .... it's terrific ... and you could sure add other greens to it. In effect a FAT sanga :)
 
I always (now) have a mixed leaf salad, which I pick up from my local co-op. Also add spinach, iceberg, red cabbage, onions, beetroot, plus cucumber, toms and eggs. Add a side dressing. (Low carb variety) Add different proteins (usually hot meats!)

I have a homemade curry, with this salad, every couple of days and I vary the curry.

I have probably missed a few items that also go into a salad.

That any use?
 
If you are feeling the cold, maybe have a warm salad.

Baby spinach leaves, asparagus, roast peppers, balsamic red onions, cheese, nuts, etc
 
I like to chop everything really small : onions, avocado, tom, cucumber & add capers, pinenuts, gherkin too. Sometimes I add chopped feta cubes and then put olive oil on.

Been trying to remember salads that I have really enjoyed, over the years...

  • Salad leaves, sliced pear and Stilton was a good one
  • Grated carrot with lemon juice and roasted cumin and mustard seeds
  • Love a good Caesar Salad, esp with chicken

Oh, and coleslaws (with cheese or fruit, but NOT those dreadful sultanas! :yuck:)
 
@Brunneria, whatever salad you choose make sure to throw in a handful of Rocket Leaves, they are delicious and have a nice peppery taste to them, I really enjoy the mixed baby leaf salads found in most big .supermarkets
 
I've just treated myself to an electric grater/slicer. I made coleslaw and its not bad. i need to tweak it abit as its a little bitter, but I'm happy experimenting. Its so quick and easy. I find i prefer my salad covered in some kind of dressing.
 
I make coleslaw with red and white cabbage for bit of crunchy colour.
Roasted peppers are lovely with bit of feta cheese and the usual leaves. Griddled asparagus and feta or goat's cheese with some watercress and rocket leaves and a lemony dressing.
Mackerel and some peppery leaves- nice with a few slivers of orange if you can manage it and use a walnut oil to make dressing. Ham with nectarine slices and feta is nice or crumbly white cheshire or wensleydale. Chicken and bacon caesar salad using avocado instead of the croutons. Peppery leaves with bit of black pudding and a poached egg on top. Tuna and feta salad mixed with few black olives and a few cannelini beans and red onion. Egg and tomato in mayo stuffed into baby gem boats.
 
I absolutely love rocket, and enjoy spinach and watercress too.
When I have salad, rocket, toms, cucumber, peppers, eggs, beetroot ( sometimes) gherkins,spring onion, homemade dressing drizzled over the top and some coleslaw. Mackerall is so tasty with salad :hungry: I don't have salad to accompany another food, the other food is a very small part of the meal and the salad 3/4's.:D

ps,Or slice up some Mattesons sausage and cubes of cheese, lovely.

In winter I like a big tomato sliced and spread out with olives and a dressing with a bit of bite, in the microwave for 20-25 seconds, then add sliced hardboiled egg, cheese, ham, whatever. Basically force that nasty cold tasteless tomato to yield its flavour as if it's been in the Mediterranean sun for an hour or so.

That's one I will be trying!
 
Diced feta cheese, black olives, cherry tomatoes, and basil leaves, with a bit of olive oil.

Warm chicken with chopped celery, apple and walnuts, in a chives and yoghurt or sour cream dressing. I sometimes add a little mustard if I want a bit of extra zing.

Grated courgettes and cheese with roasted peanuts.

Raw baby veggies , e.g. spinach, mangetout or sugar snap peas, baby sweetcorn, cauliflower, tiny grated carrot or courgettes. I sometimes eat one or more of these on their own or in combination with "normal" salad.

Tesco (often) do an aromatic baby leaf salad mix which is a lovely smelly change from the normal baby leaf version. Or you can also add your own fresh herbs (chives, mint, parsley, basil, coriander leaves...)

I love salads .. Mixed leaves and watercress is a must .. Coleslaw with chease and something warm ... Roasted collieflower with cheese topping .. Roasted brockley with again a chease topping ... Chease omlete with mushrooms .. Corgette and roasted peppers in. Collieflower roasted with a curry sauce topping .. And lots more :) salads are great .. Match your dressing with the hot part of the meal .. So a curry dressing for the curry .. Mustard dressing with the chease and collieflower .. Add mustard or curry powder to the coleslaw ... Yummmmmmmmmmmmmm
 
I love a Caesar salad, prawn and avocado, Greek, Waldorf. All the classics!

If you've got Bernstein's book, his Antipasti salad is good (Italian meats, spring onions, olives, leaves, cheese and dressing).
 
Luckily I adore salads - here is something I often eat and really enjoy .
They are reliable and compatible with my BG levels too .
Don't spike nor raise them a lot :happy:

Try my Lettuce Parcels .
So easy to quickly rustle these up .
No cooking even needed or required .
Add as much or little into these as you wish .

Lettuce leaves - pre wash pat dry
Turn lettuce leaves upside down like a dish and
Chuck in any of your favourite salady things .
Mix and match as per your own choice's .

Wafer thin ham , feta cheese, cucumber, celery, grated carrot , sliced boiled egg
sliced beetroot , cherry tomatoes , lean chicken , spring onion , peppers , tuna fish
sweetcorn, prawns ,avocado , gherkins , pickles , grated or sliced cheese etc ...

Add a drizzle of own salad dressing as desired .

Roll them up - and serve on small plate (then it looks more)

Happily munch on these as a lite lunch or tea/supper if wish .
Suprisingly tasty and filling I have found them to be too .
