Your A1c is probably falsely low because like me you suffer Reactive Hypoglycemia, where the highs are brief and only glycate the blood reversibly, and you have lows where the blood is glycated even less than a normal person.
Definitely go for the private appointment, it will be interesting to see if they have a better diet plan than the typical NHS "Eat More Starch!"
IMO cutting fats in not a good plan, they help slow down the conversion of carbs to glucose and especially with RH their absence will tend to make you spike and drop more rapidly.
This is one condition where the GI of carbs as well as their quantity needs looking at, go for small quantities of relatively low GI carbs and several small meals/snacks rather than a few big ones, at first at least.
