:) Chicken salad = good. Hope you included some full fat mayo :). Maybe next time substitute white roll with a wholemeal one or a slice of Bergen soya and linseed bread if you really feel you need it. or, a couple of small new potatoes. I see you went twenty hours without food to get your BG down. Not a good idea, your liver will probably try to compensate by dumping a load of glucose in your blood stream which will push BG up again. Hope this helps a little. Am sure others will have better suggestions, so keep checking back and testing! Lots of good luck ;)
 
As an expirement try chicken salad again depending on what was in salad best is dark green items be wary of carrot and sweetcorn they can be highish sugar so go for minimum of them and no potato in any form and as said make sure you have some hellmans full fat mayo.
Avoid all starchy food so no bread.
Test just before you eat then test 2hrs later.

Look for foods that say a max of 5gram of carbs/100gram.
Avooid low fat foods they are sugar (carb) bulked for taste.
The book carbs n cals is excellent get the full size not pocket version as more in it
And as said definatly avoid going that long without food

thank you i now have the book on order on Amazon and yes i did have potatos and carrot and yes you got it sweetcorn......... i have a lot to learn

;) So glad you are learning all about healthy eating for diabetics, and, in general. I think most of what we have been conditioned to eat isn't good for anyone, which is why even aware non-DB people are into prevention and healthy life-style.

I was actually thinking the same thing and glad that you are mentioning this.
"Fasting", as in a cleansing fast is another issue, also.
