. Maybe next time substitute white roll with a wholemeal one or a slice of Bergen soya and linseed bread if you really feel you need it. or, a couple of small new potatoes.
I see you went twenty hours without food to get your BG down. Not a good idea, your liver will probably try to compensate by dumping a load of glucose in your blood stream which will push BG up again. Hope this helps a little.
