Hi, I have had a bit of a search and I'm struggling to find some snack bar recipes. I've been using the Rocky road recipe from the Chocolate paradise thread but need a change. I would quite like to make a fruit and nut type bar, like a flapjack but not sure how to fuse it all together. Any help and recipes would be greatly appreciated.

Heres one, I wouldn't eat it myself as there is too much sugar!! Sorry thats unhelpful I know. I used to make these kind of bars myself and they stick together with honey or peanut butter and light baking BUT
Check out seed crackers / flax seed crackers- no carbs. When I get to my home computer i will try and send you some much better recipes.

I make my own bars. My recipe is:
2 mashed bananas
4oz butter (melted)

Then I mix it until stiff with a mixture made up from a bag of Tesco finest granola, 300 grams various chopped nuts and 300 grams ground almonds (this will make several batches of bars).

Put in 8 inch square tin and cook in oven Gas mark 6 until browned. Cut into 16, 50 gram bars when cool.

I can't eat wheat so this recipe doesn't have any, it also doesn't have any added sugar. The mixture has to be pressed down in the tin, otherwise the bars can be a bit crumbly.

I find that these don't spike me and are a quick and easy breakfast bar.
 
Im still looking if anyone has any very low/low carb ideas please?

I have been making these and variations of these for a while now and they are brilliant. I eat an extremely low / no carb diet and these are totally okay. I also use milled flax in mine, i use ground nut, loads of different spices etc etc. Once you master them they are easy and tasty. If you dont care about the nutrients you can get them crispy in 15 minutes. I dehydrate mine because it keeps the benefits of the flax and seeds (all good for lowering blood sugar). They take about 10 hours to dehydrate. I use my oven at 42 on crisping trays. Message me if you want a proper explanation!

Hi, thanks those look interesting.

However Im looking for more of a dessert fruit and nut type bar. Im thinking chopped nuts, maybe some sunflower seeds, could put some flax in with maybe a few raisins, or some dried cranberries or apricots. Just not sure how to bind it all together as I would have previously used syrup.

Any ideas?

This was the best one I could find. Not sure about the honey, but you can definitely do without the chocolate on top if the sugar content of that is too high for you :) I'll have a look around and if I find anything interesting will let you know!

You can bind it with a cake mix. if you are going to cook it. So egg, flour, butter No sugar needed.
If raw you just need to use some mejool dates, you can marmalise them in a blender and then mix everything together, pack it into a tray and refrigerate it. Then cut into bars.
I make these as well as energy bals but I use the minimum about of sugar / fruit possible. Insted of mejool dates you can use apricots, the lowest sugar ones are the organic ones so they are not bright orange. They are a little hard so soak them in a little bit of water. If your mix comes out too wet to form into a block or balls then thicken it back up with some milled flax seed. If you do make balls you can roll them in some unsweetened dessicated coconut, or green and black dark coco powder or cinnamon. All three of these give the impression of sweetness but they are all either no sugar or minuscule sugar / carb
