You can bind it with a cake mix. if you are going to cook it. So egg, flour, butter No sugar needed.
If raw you just need to use some mejool dates, you can marmalise them in a blender and then mix everything together, pack it into a tray and refrigerate it. Then cut into bars.
I make these as well as energy bals but I use the minimum about of sugar / fruit possible. Insted of mejool dates you can use apricots, the lowest sugar ones are the organic ones so they are not bright orange. They are a little hard so soak them in a little bit of water. If your mix comes out too wet to form into a block or balls then thicken it back up with some milled flax seed. If you do make balls you can roll them in some unsweetened dessicated coconut, or green and black dark coco powder or cinnamon. All three of these give the impression of sweetness but they are all either no sugar or minuscule sugar / carb
