I do make low-carb cakes - and there are lots of recipes online for these. I cut them up and save some in the fridge and some in the freezer.

As a Type 1 (which I realise the OP is not), Carb Killas are not friendly to my BG. If I only give myself insulin for the carbs my levels keep rising.
I do not know if type 2 would experience the same thing but I would definitely recommend testing before buying a big stash of them.
I notice from your profile you use “Tresiba.” (Insulin wise.)
Tresiba is a basal insulin designed to work in the background. Are you needing to snack due to lows?

I’d echo this. As a diet controlled type 2 they send me into the stratosphere. And they contain maltitol, which in my view is one of the most effective laxatives known to man.
@Goonergal & @In Response make very good points.... If you do go for something high in artificial sugars, always test. It doesn't do much of anything to my bs as it happens, but I only have a fourth of one due to the laxative effects...
I've only conducted this test once so far, but, I tested at 9.2 the other night at 10pm. I had 50g of Pringles (a quarter of a tube / can). Tested again at midnight, was 7.2.
