To much to say.
I ate a slice of Irish soda bread with butter and two eggs,I done my reading two hour later and it was quite high at 9.6,so then I went for 30 mins ride on my bike, come back and done another reading which said 6.6,does this mean I can eat soda bread as long as I bike ride after to bring it down...thank you...xox

I think that it is different for each person, if I eat Irish Soda bread, which I love, I spike into the teens. I spike on the bread/rusk content of a sausage but that could well be down to gluten intolerance or even coeliac disease. Others may well be able to eat more bread some may not.

All food has either a High Glycemic Index or Low Glycemic Index. This is the rate at which it impacts on our blood sugar levels. Rye bread, like pumpernikel has a low GI level.

@Russ
Is this the rye bread that looks black and is sliced quite thinly ? I have tried this, very difficult indeed.
Or is it the rye bread that looks white/creamy ?

Polish bread had this style.

soda bread is just bread with chemical raising rather than biological raising.
There is a thing called sukrin bread mix which has very few carbs and tastes good but is quite expensive.

Can it be bought in Tesco,I just need a slice of bread and butter lol...

If your referring to the post by Russ then the best place to buy Rye bread is Lidl or Aldi, just be warned the bread is an acquired taste and not to everyone's liking.

Ok,I will try it,I have a lidl near by,hope I like it,and where can I buy the Surkin mix please...ty

Thanks Andy,I don't have these stores near me,but I got a new freezer this morning,so maybe I will travel and get some to freeze...Do you know if Bulger wheat is high carb...

I'm sorry i don't know about wheat, i love to cook and bake but never bread, i tried to make bread just once from flax and after my house stank for three days i gave up making bread as a bad idea so have never experimented with wheat sorry

Any diabetic friendly bread I have made using any stuff other than wheat flour has been a disaster and totally inedible so I have given up on that. Now I have the Burgen soya and linseed bread...which a lot of members here have... I really don't like it that much but I can eat two slices ok so I have it toasted...the only way I can eat it... with my breakfast. I don't like it for sandwiches though so I don't have them any more I have rye crispbreads instead Aldi's do some nice ones really thin and crisp

Annie,I tried the Burgen bread and loved it,but it spiked me up,but am not sure weather I should go out on my bike straight after the reading to bring my levels down,if so,then maybe I can carry on eating it,do you know if I did eat it again, and went straight out on my bike and tested again when I got back that this would be ok...Hope I explained that right...ty

This is the best and lowest carb bread I have tried. Its now the only one i make.

"I've been experimenting with low carb bread recipes and think I've finally created something that actually tastes like bread and is low carb! My old recipes that I've posted on here contained almond flour, but I think this gave them a funny taste. I've substituted this for soy flour, which has more carbs, but tastes fine.

I use cups as it's quicker than weighing out the ingredients. If you've got a measuring jug then a cup is 235 ml. I used the "wholewheat" setting on my breadmaker.

1.5 cups wheat gluten (36g carbs)
1.5 cups soy flour (19g carbs)
1 cup ground linseed (2 g carbs)
0.5 cups wheat bran (8g carbs)
0.5 cups mixed seeds (sunflower, pumpkin etc.) (8g carbs)
1.5 cups water
7g sachet fast action yeast
salt, to taste (0.5-1 tsp I'd guess)
1 tsp sugar (gets used up by the yeast)
glug of olive oil

By my estimation, that gives 73g in the whole loaf. My breadmaker's pan is 20cm long, so a 1cm slice has 3.7g carbs in it. You could omit the mixed seeds to make it even lower carb. All of that wheat gluten is needed to give it the texture, I've posted recipes before with less wheat gluten in it, but 1.5 cups is the magic number to give it a proper bread-like texture.

I've you've got a breadmaker and miss bread since LCing, then please try it as it tastes just like normal bread similar to Burgen's soy and linseed bread (except Burgen's has flour in it). I now have sandwiches for my lunch again!!!! :D"

I have tried livlife bread too which is nice as well.
