Hi LowCarbers. Husband is trying to get his BG back under control and I am trying to get my weight under control. I make soup using a couple handfuls of Spring Greens, small tin of carrots, oxo cube, bit of ginger/garlic, some cream. Is this suitable? Or do the carrots need to go?
I could happily have this every day so I want to make sure it's ok for us.
 
The only way to tell for your husband is to check his blood sugar before the soup and two hours later to see how he tolerates it and for you the weighing scales are your friend.
 
I think your soup is OK. What else are you eating besides the soup?
 
Don't know yet, am working it out now. Scrambled or poached eggs maybe and bacon & egg for breakfast. I'm trying to find stuff we like that will do - maybe cold meat salads? This is for after the Year :D
 
Try without the carrots and see if there is any improvement. It's an individual response, but carrots are out for me. And how about bone broth instead of the oxo cube? Stock cubes have carbs in. If doing without these makes no difference, you can put 'em back in.
 
Good ideas, will experiment. Am saving all the ideas now, to start after new year. TY
