Most of the low carb bread recipes I've seen contain eggs, but the Lidl rolls and Burgen don't. I wish someone knew the magic recipe! Good luck with finding one.Not really, but thanks anyway. I don't have any objection to gluten, and as you say it's probable essential for the texture. Burgen Soya and Linseed bread at 26% is about half the carbs compared to a normal white loaf. So for something similar I guess I need a recipe with about half the amount of flour and other carby ingredients that are used in a white loaf. If 500g flour is used for a 800g loaf then I suppose I might be ok with a recipe with about 200g of flour so I will look again at the recipes on Google. The Lidl rolls are only 9.8% carbs so that recipe must involve some magic as @Avocado Sevenfold says.So does the Lidl rolls and the burger bread ??
You won't get a recipe with the texture of the rolls or burgen bread without some form of gluten flour - it's what's needed for the rise from the yeast. You could work out the carbs from a recipe you like you may be pleasantly surprised
