I went to Lidl today to replenish my stock of High Protein Rolls and they had no non packaged bread at all! The checkout person said " They must have not delivered the stuff to make any I suppose". Of course I can survive until they get a delivery or buy one of the other low carb breads, but it occurs to me that it ought to be possible to make my own. The only low carb breads I actually like, rather than being just ok, are these rolls and Burgen bread, both of which have soya and linseed as main ingredients. Has anybody got a recipe to make something similar? I am not interested in things that just look like bread, they have to have that proper bread texture, which probably means gluten.
