Soya and Linseed Rolls Recipe Wanted

I went to Lidl today to replenish my stock of High Protein Rolls and they had no non packaged bread at all! The checkout person said " They must have not delivered the stuff to make any I suppose". Of course I can survive until they get a delivery or buy one of the other low carb breads, but it occurs to me that it ought to be possible to make my own. The only low carb breads I actually like, rather than being just ok, are these rolls and Burgen bread, both of which have soya and linseed as main ingredients. Has anybody got a recipe to make something similar? I am not interested in things that just look like bread, they have to have that proper bread texture, which probably means gluten.
 
Oops forgot also have a breakdown from Lidl of the ingredients in their High Protein roll...

Not really, but thanks anyway. I have seen low carb breads based on almond flour and pysilliam husks but neither are in the Lidl rolls or Burgen bread. What I haven't found is a soya and linseed recipe.

I googled soya and linseed bread recipes and there's loads - haven't posted a link to any as they are all different with different ratios of flours etc and not sure which one you would like most - have a Google and a browse you may find one that's suitable for you :)

Most of the low carb bread recipes I've seen contain eggs, but the Lidl rolls and Burgen don't. I wish someone knew the magic recipe! Good luck with finding one.
 
Our nearest one (at the moment) had oven problems so no rolls either. Perhaps the Bank Holiday confused things.

All the recipes from google I found had wheat (or barley) flour as the main ingredient with the addition of some soya and linseed which I don't think is likely to be very low carb.

So does the Lidl rolls and the burger bread ??
You won't get a recipe with the texture of the rolls or burgen bread without some form of gluten flour - it's what's needed for the rise from the yeast. You could work out the carbs from a recipe you like you may be pleasantly surprised :)

The ground flaxseed I bought at Tesco has 3g of carb per 100g with 40g of fat.. Agreed the soya flour is higher.. about 14g per 100g. I think you will have to experiment with various recipes until you get something akin to what Lidl produce or you could email and ask them if they'll let you have the recipe...

I don't have any objection to gluten, and as you say it's probable essential for the texture. Burgen Soya and Linseed bread at 26% is about half the carbs compared to a normal white loaf. So for something similar I guess I need a recipe with about half the amount of flour and other carby ingredients that are used in a white loaf. If 500g flour is used for a 800g loaf then I suppose I might be ok with a recipe with about 200g of flour so I will look again at the recipes on Google. The Lidl rolls are only 9.8% carbs so that recipe must involve some magic as @Avocado Sevenfold says.
