My husband has bought lots of reduced bags of spinach and I was wondering if anyone has any recipes we could make using the mountain of spinach we have. We usually eat spinach uncooked so not really sure what else to do with it.
 
I love it cooked with onion garlic tumeric green chilli and coconut .....all cooked and blended together like a saucepan of big green thick soup, nice with a little rice (I eat rice) or a bit of Indian bread ....goodness feeling Hungary for spicy food now.....;)X

thank you! my husband would love that, unfortunately I don't like spicy food. I will give him the recipe and he can make it for himself!
 
It is really nice, guess you could make it with fresh tomatoes and coconut milk .....more of a soup that way x
 
My egg recipe. Cook spinach in butter with a bit of salt pepper and nutmeg (if liked). Pop it in a ramekin dish, then pop egg on top add a bit of parmesan or cheddar with a spoon of cream, into the oven for 10/12 mins at 180. Lush.
 
Chicken breasts stuffed with spinach and feta cheese. (Thanks to Jan Mitchell for this one) It's delicious cold as well as hot :)
Ingredients
Serves Four
4 boneless chicken breasts with skin on
85g frozen spinach, defrosted ( I use fresh)
85g feta cheese, crumbled
2 tablespoons olive oil
2 tablespoons pine nuts
Little black pepper
Salt and Pepper to season

Method
Loosen the skin from the chicken.
Drain the spinach in a sieve and press out as much water as possible.
Mix with the feta cheese and a little black pepper
Then stuff between the flesh and skin of the chicken, smoothing the skin back over the stuffing. Season the chicken all over with a little salt and pepper.
Heat the oil in a frying pan with a lid.
Add the chicken, skin-side down, and fry until the skin is browned.
Turn it over and cook on the other side, then add the pine nuts and fry until lightly toasted.
Add 6 tbsp water, then cover for 15-20 minutes until the chicken is cooked through.
 
My husband buys a large bag and if any is left over I make a cream of spinach soup with it: spinach, bit of butter to start it off, then add salt/pepper, nutmeg (you could leave this out), stock cube, tiny bit of water and lots of cream, whizzed with a blender. Serve up with some grated cheese on top.

look for Indian saag recipes, my wife has one on her blog but I can't find it.

Just spinach, tomatoes, ginger, garlic other herbs/spices as you like, stewed to death and very tasty. You can add as much or as little chilli as you like, you can also add paneer (Indian cheese) or potatoes if you are that way inclined.
 
Thank you for all your replies, they all sound lovely and have given me lots of ideas. beachbag the chicken looks delicious and will definitely be on the menu.
 
I remember(cooked spinach) with scrambled eggs being quite nice and I'm quite surprised just how difficult it is to find frozen spinach in shops over here(given that "rahmspinat is ubiquitous in Germany _ Iceland seems to be the only shop to carry frozen spinach at all.
 
Most supermarkets sell frozen spinach, we get our frozen spinach from tesco's and they are packed into individual cubes for convenience.

I use spinach in stir-fry's and curry's, it best to pre-cook first in the microwave and drain the water off as there's a lot of water in spinach, as a side dish I fry it together with onions and chopped garlic and season with ground black pepper before serving, full of good vitamins and it gives you muscles like Popeye the Sailor Man ;)

I do soemthing very similan with leeks.

very finely slice, saute in butter, add chopped tarragon, cream, black pepper, pop in a ramekin, egg on top

Very quick and scrumtious.
