subsitutes for high carb foods

Are there any other substitutes for the stachy carbs such as potatoes, rice etc other than salad.
I have never really liked salad so just eating it most of the time is really hard and most of the time causes me to get really fed up.

It is hard to reach the different mindset which says 'forget them' but I think that is the only way. :roll:

Having said that, I need something to go with a curry and use cauliflower instead of rice as suggested elsewhere on this forum. I have grated it and micro-waved it dry on the plate and covered with pricked cling film for 4 minutes and that works well.

Someone else said to use cauliflower as a mash but I haven’t tried that yet although I have used celeriac as a mash and found that to be quite good.

I expect someone else will be along with another idea in a minute. :D
 
We use cauliflower as shepherd's pie topping and probably wouldn't go back to potatoes now, even if I stopped low-carbing.

We normally puree it with plenty of cheese and cream, but choose to hand-mash it with less dairy for a fish pie, and also a turkey & gammon pie, that we make.

Other than that, turnips serve the same sort of purpose as spuds in casseroles, and also make a delicious dauphinoise.
 
Hi Ruth , rather than completely cut out bread , I eat the Burgen soya and linseed bread which is half the carbs of other breads including wholemeal and its nice, keeps well too ! I occasionally use filo pastry as its lower carb than short pastry, just one sheet to wrap around a salmon steak with spinach , it feels naughty but it isnt really !! If we have a curry, instead of rice , I lightly toast a slice of Burgen and then spread with garlic butter and grill for a minute . Instead of spahetti , I part roast halves of a pepper and fill with the cooked bolognese mix , sprinkle with parmesan and back in the oven for ten mins . A really good low carb cheese sauce for cauliflower is to use a tub of low fat creme fraiche , black pepper and stir in a handful of strong cheddar and then blob it over the cooked cauli and grill or bake x

I know how you feel - & when wife provides our food, its salad. I eat it to keep her company - 48 years married this summer.

Root veg can be used instead of potatoes in all sorts of recipes, & can be roast (shaken in a little oil or butter, & mashed. I just have extra veg instead of carbs. You will find some low carb 'minute muffin' recipes if you search MUFFIN & I use this as a basis for bread (not as we know it, Jim) & sweetened as cake.

I tend to do without, or have a teaspoon ful.
It's easier than thinking up something clever. But I do love salads.

Celeriac has become one of my favourite things since low carbing, did a slow cooked beef stew with celeriac mash, sauages & cheesey celeriac mash (was lush!!) & am trialing celeriac chips tomorrow night with steak!!

Gosh low carbing is tough isn't it... :lol:
 
Note to self : Farm shop tomorrow for Celeriac !
 
Celeriac, celeriac, celeriac - anything you can do with a spud more or less including chips.
Leafy green vegetables are lower in carbs than root vegetables.
Suggest having a look at carb content on frozen veg packs
