I want to make hubby a birthday cake . Hes not diabetic. What sugar alternatives are good for sponge cake and a butter icing / frosting topping.

And what is good for occasional use of alternatives for sugar in cooking , generally

Not what you asked (sorry) but how about you make him his own personal cake with the usual cake ingredients, and make yourself something really yummy about the same size that isn't a cake?

Note Im the diabetic so i'd like a tasty cake that suits both with some sweetness

I wanted to join in with the family. Ive forgotten what Ive used before . Im not an avid cook. Its mostly the frosting or butter icing .

PS I can eat cake on occasion , Im not bothered about the fat content as I only weigh 46kg - type 2. And eat a small slice. Its a specia birthday for him with family coming . I just want to have a wee slice of his cake

I'd have a small piece as it's a special occasion. One thing I've learnt from not sustaining my first low carb, successful as it was at the time, is that if a treat is planned on, its not too bad. If you end up eating sausage rolls, sandwiches and crisps along with a small slice of cake, not going to be good. But if the rest is low carb, cheeses, meats, salad etc then that will help balance it out.
And I'd now make it a small cake so there was none left for later to tempt me!

If it’s a one off, then cook him what he fancies and have a small piece.

Hi Jenny105, it’s not just the sugar/sweetener you need to think about, but the flour will be high carb. Try Googling ‘keto followed by…’ for example chocolate cake. If you are fans of carrot cake here’s a lovely recipe:

Low carb baking is very different from "normal baking" as it's not only the sugar that needs to be substituted but the flour too. Neither has a suitable 1 for 1 swap so quantities and proportions change too.
I find the recipes on this UK site to be easy, and to suit most tastes.
Doesn't have to be Brownie, they do other types too. Just search for what you want.
However, do note that low carb baking is much more expensive than ordinary, so I usually bake or buy normal for the carb eaters, then bake and freeze special for me alone .
I do also , very occasionally have a piece of normal cake, but find most of them way too sweet and tastless now. The exception is the frozen "Carrot cake" from the Cook chain which serves our family of mixed vegetarian and no nuts and me, well.

Low carb baking seems to me to be a bit of a dark art, you have to be something of a baking wizard to get low carb flour to behave.
I would just buy a delicious cake and enjoy my slice with an enormous dollop of cream to slow down the absorption of the carbs

I use Pure Via as a sugar substitute where necessary; they offer quite a few variations, including Demerara, which is good in coffee. I've not yet used it in a cake recipe, but no-one noticed when I made Delia's apple almond pudding - basically a combination of ground almonds, eggs, butter, and sugar over sliced cooking apples.

The above suggestions are great. I think it would be tricky trying to make a sponge cake with icing that doesn't use refined flour and sugar but it may be possible to get something close.

If you can use the sugar substitute suggested by Dancing Badger (above), consider making the sponge cake with wholemeal flour (there are recipes on the web), filling it with cream and having a normal icing. Then you could enjoy a small slice of the cake (with cream) and not eat the icing.

I made brownies last week using Almond flour. I tested one afterwards and at 1 hour my BS was 8.5 but at 2 hours it was down to 6.5 so I’m going to try making a Lemon Drizzle tomorrow

I follow ‘all day I dream about food’ (catchy title lol) on YouTube, she bakes wonderful low carb cakes, brownies, cheesecakes etc. her blueberry jamboree is so delicious. I bake with erythritol and use it in my coffee and on yogurt and berries
