Hi all.

Hope you are all now recovered from the festive season. Last night I cooked Swede chips instead of potato and had around 150g of them. My blood sugar spiked quite a lot up to 10.2. Is it just down to me or was it because I fried them in the deep fat fryer in Sunflower oil as I was in a hurry.

Swede,parsnips,potato's and most root vegetables will spike your BG .Sunflower oil is also a problem

Three things that I couldn't have, with my very low carb lifestyle.
One, Swede, it's bad! Too much starch, rapidly turns into glucose.
Two, Sunflower oil, it's bad! I only use saturated fats, i.e., animal fats or coconut oil. Vegetable oil will not help slow digestion. It will also not help with reducing weight. Though that's debatable.
Three, 150g, wow! If I did a third of that, I would have a hyper!

You need to read the low carb diet forum and see what everyone is eating and being recommended.
 
Swedes are full of carbs, so it's them you should definitely be trying to avoid. You may have found that if you hadn't fried them you might have got a higher reading still. Oils can be good for you as they are carb free, contain vitamins, etc, and are a source of "fats" if you eat a low carb higher fat diet. But some vegetable oils contain high percentages of omega-6 which can be a bad thing in large quantities. So you may want investigate pros and cons of sunflower oil and make an informed decision whether to use it or not.

Thanks for that. I dont normally have sunflower oil. I usually fry in butter but I was in a hurry so thought I would do it. Just tried again but in the oven and less. They shrunk to twigs anyway. It's trial and error and I'm only just starting this.
