Yesterday I was racking my brains for a new sweet rather than savoury breakfast (I love coconut porridge, low carb pancakes and Greek yoghurt with berries). I'd planned to have scrambled eggs (virtually carb free) today as roast Sunday lunch and tea (at my ILs) tend to be a little higher in carbs than my mid week meals. I was wondering if you could make sweet scrambled eggs so started Googling. The answer is yes! I found loads of recipes, but the ones that caught my eye were the ones containing cinnamon, as I've read it can help in blood sugar control. So this morning I made my own version from ingredients I already had in the house. 2 eggs beaten with 1/4 tsp of cinnamon powder and a tsp of granulated Splenda, microwaved for 50 secs, beaten again then microwaved for 20 more secs. This along with a cappuccino from my coffee machine saw readings of 5.6 mmols/l before and 6.1 mmols/l 2 hours afterwards
