Sweet Scrambled Eggs! Yes Really!

Yesterday I was racking my brains for a new sweet rather than savoury breakfast (I love coconut porridge, low carb pancakes and Greek yoghurt with berries). I'd planned to have scrambled eggs (virtually carb free) today as roast Sunday lunch and tea (at my ILs) tend to be a little higher in carbs than my mid week meals. I was wondering if you could make sweet scrambled eggs so started Googling. The answer is yes! I found loads of recipes, but the ones that caught my eye were the ones containing cinnamon, as I've read it can help in blood sugar control. So this morning I made my own version from ingredients I already had in the house. 2 eggs beaten with 1/4 tsp of cinnamon powder and a tsp of granulated Splenda, microwaved for 50 secs, beaten again then microwaved for 20 more secs. This along with a cappuccino from my coffee machine saw readings of 5.6 mmols/l before and 6.1 mmols/l 2 hours afterwards :)

No not at all! You'd have to like cinnamon of course which I do. Some recipes added more cinnamon but 1/4 tsp was enough for me!

Very good, yes I think any more than 1/4 tsp would be too much.

Still prefer scrambled eggs done in a pan rather than a microwave.

Indeed, you have to be careful to cook the eggs to the stage of being a little underdone in a microwave, as they continue cooking on removal. They can easily go rubbery.

Good plan! Oh now I'm picturing cinnamon omelette with double cream and strawberries. Just use them as an alternative to pancakes :p:)

I prefer it to pancakes.... I like them just dusted with a little extra splenda and cinnamon and folded over some raspberries. :)

I'm guessing that nutmeg would work well too, as it goes into custard tarts quite nicely. Hmmmm. Now that's got me thinking. Wonder if custard tart filling would work if missing the sugar, and adding a bit of sweetener.

Another sweet recipe with eggs is Ham / Pineapple / poached eggs. Toast the pineapple rings or slice, top with chopped ham (low fat) and then cover with a poached egg. This is a Sunday breakfast special.
That sounds good I love ham and pineapple combination :)
