T2 diagnosed 6 month.

I was diagnosed 6 months ago blood sugar levels 22. Weighed 23 stone.
Six month later bsl 5.5 weight 15 stone.
Been on a strict low carb diet. Last night I ate 2 bags of crisps and loads of chocolate blood sugar level only went up to 6 . This morning levels were 5.3. Why were they not higher?
Also not taking any medication for the last month.

A few possibilities there, fat in choc slows the carb absorption so you could have been higher later. Or lower insulin resistance due to your weight loss lc diet.
 
Eating a low carb diet allows the metabolism to recover its mojo - it was probably happily stuffing the results of digesting the crisps and chocolate into various cells around your body so your blood glucose did not rise.
I can eat more carbs now - they go straight to my waist and hang out there for a week or so until I can work them off again.
