Testing for spikes

No simple answer I think. Most say check after two hours but if you have something both carby and greasy, the spike can happen hours later. Because the grease delays the absobtion of the carbs. Try a cgm if you can get one.

I was recommended to test just before eating and 2 hours after the first bite. Although I know some people like to test before, then 1 hour later and again 2 hours later.

If I try something new I test after 1, 2 and 3 hours. A CGM which monitors your blood sugar levels 24/7 gives a much better
picture. You may be lucky and get one from your Dr. I self fund and pay around £48. It's called a libre sensor and the sensor only lasts 14 days but even wearing one will tell you so much about how your body reacts to certain food/drink.
