i always quite liked Old Jamaican ginger beer but diabetes put a stop to that and the diet version tastes disgusting!.
I found and made this recipe for low carb ginger syrup today - mixed with sparkling spring water it makes a very nice ginger beer substitute.

Lord knows how they got theirs to be that colour tho - mine was much paler but with a big kick as I upped the ginger content

A favourite winter drink for me is ginger infusion.
I just grate a load of fresh ginger into a thermos flask and top up with boiling water.
When I fancy a drink, I strain off a bit from the flask and dilute with more boiling water. Then top up the flask to keep it going.
My partner adds lemon juice and honey but I like it neat.

It’s a great “tube clearer” when I have a sniffle.

It’s a great “tube clearer” when I have a sniffle.
I do a lemon one -halve a load of unwaxed lemons, boil then simmer them in a mix of water and some erythritol until nice and squishy, squeeze all the lemon juice you can out of the lemons then discard them and reduce the remaining liquid to the consistency desired. Might try adding ginger slices into the mix too

I hate to say it - but nothing replaces the real thing - homemade fermented ginger beer. And it ain't sweet. Not at all. I haven't been able to turn anyone on to my own batches when there has been a bottle of schweppes ginger ale they can drink. But the real thing is an acquired taste. Lots of ginger. Lots of healthy micro thingamies for a healthier gut biome. But not at all sweet. (The thingamies ate the sugar to breed and created the lovely bubbles.)

I remember "feeding the ginger beer plant" when I was a child but no one seems to have a clue what I am talking about.

So did I, @helensaramay. And I also seem to remember an airing cupboard liberally decorated with the stuff when one of the bottles exploded. (Although it could have been another type of beer or booze as my dad experimented with all sorts of brewing). It was lovely stuff - none of the commercially-made beers got near to its bite, and they were all rather sweet.

Other than sarsaparilla, it's ginger beer. Hate coke, fanta, lemonade but gimme a sharp taste ...

I remember making ‘proper’ ginge beeer at school and there were many explosions, thinking back I suspect that in our little 14/15 year old minds the explosioon was the main purpose / event of the exxercise, with respect due to whoever got the most spectaculor one!
