I have read this is a good addition for us diabetes people. How do you cook it or with it and what do you put with it ?

I buy extra firm tofu (sometimes smoked). I get as much moisture out as I can, cut it into strips and marinate it for at least 30 minutes in a mixture of low salt soy sauce, a bit of honey or maple syrup, toasted sesame oil, rice vinegar (if I have it to hand) and garlic powder and a pinch of chili powder. Then a stir-fry with veggies (again toasted sesame oil). I used to love it with noodles - especially buckwheat - but that avenue of pleasure is gone. Unless someone can recommend low carb Chinese noodles. Sorry I can't give quantities.

Get as much moisture out as possible then slice cut into 6 & marinate it in olive oil, soy sauce, chilli powder & crunchy peanut butter & bake in the oven, usually have it with salad, roasted or steamed vegetables
 
You might try H&B's zero-carb range (noodles/pasta/rice/couscous). I was very sceptical but with enough flavourings it's actually OK and quite filling (1 pack does 3 meals for me) so the portion-size is good for those managing diab. that way.
 
I'm afraid I only like it cooked in batter with salt & chilli by a Chinese takeaway! A friend suggested grilling it instead of frying but I never got results that satisfy me at home.

In theory it can go in stir fries or with salad, but needs significant seasoning as it's quite bland in itself.
 
@Mark Rawlinson We mainly use spiced Tofu (it has a firm texture) and use it in stir-fries if we don't want to use meat. But even with the spiced type, there isn't a great deal of flavour, so it's best with strong flavoured sauces.

It makes vegan Low Carb possible, but meat (if you eat it), is much more tasty and is better for a T2D (IMO) than Tofu.

Why not just get a small pack and try?

It's just another source of low carb protein, no better or worse than meat or eggs. Very useful if you prefer to not eat meat, an opportunity for omnivores to eat something different once in a while and skip the meat.

It is not some magic food for diabetics.

I prepare a packet of smoked tofu as follows. I dry the block off on kitchen paper first then I cut in half and divide each half into cubes. I use a glass casserole dish (with lid) and add 1 tablespoon of extra virgin olive oil, 2 tablespoons nutritional yeast flakes and seasoning. I then add tofu cubes to dish and put on lid. I shake till all the tofu is well coated. It can be fridged till ready to cook. I like to place mine in air fryer for about ten minutes. It can also be oven cooked till nice and crispy.
