Firstly, I would like to echo that Type1 diabetes is very different from Type2. Although Type 1 is very similar so several other Diabetes Types, it isn't similar to Type 2. Type 2 is said to be Insulin resistance usually leading to large amounts of insulin being produced by the pancreas in an attempt to lower the blood Glucose by exerting 'extra force'.
Type 1 is very specific in that the insulin producing Beta Cells in the pancreas have been/are under attack from the immune system. There are several similar Types of diabetes related to other problems in the pancreas causing lower/no insulin production, including cancer and surgery.
I'm puzzled by what you have said about your conditions, medication and diet. Perhaps I'm misunderstanding something.
If roughage causes loose stools, IBS etc. - then why eat it? It certainly isn't required for controlling Type 2 diabetes - otherwise those on a carnivore way eating would never gain remission. If you are concerned about constipation, there is still no need for roughage - just add olive oil to your meals.
I'm aware that many people believe that insoluble fibre is required for gut health, but there are many experts and also members of this forum who eat very little fibre- even soluble fibre.
