Most diabetics have no problem with fat, it is the carbs. Protein is fine, eat as much or as little as makes you feel right.
Many fruits have been altered, bred to be high in carb. Even things like tomatoes have been altered to be sweeter. Tomatoes are fruit, botanically, like cucumbers and many other things in the vegetable aisle.
I was far into the realms of diabetes at diagnosis, so I tend to eat very few carbs, 40 gm per day at the most. I eat two meals a day, two proper meals most of the time as anything with cereal is not on my menu.
