I’ve just been practising for Christmas! Aside from the Xmas Cake, trifle always takes centre stage at Xmas Day buffet tea. I didn’t want to miss out so this morning I tried out making a low carb individual trifle! Thank you to @Snapsy for the sugar free jelly crystals idea, I used 1/4 of a packet, poured over half a small muffin, (I used @Boo1979 ‘s basic cake recipe), chopped up and some chopped up strawberries. When it was set I poured on one of these little 30% less sugar custards. Then topped it with extra thick double cream and another strawberry :happy:
A grand total of 9.8g of carbs! Tasted really good though I say it myself!

Panna Cotta would work well with that.
In place of the custard, do you mean? I’ve never made it, is it low carb or can it be low carb. I have enjoyed panna cotta in the past.

I have a screen shot from another thread. I’ll see if this works. I made 12 small muffins they took 25mins gas mark 4 or 180c

@Rachox Vanilla Panna Cotta2
60ml water
2 1/2 tsp gelatine
720ml whipping cream
2 tsp vanilla extract
8 tbsp sweetner
Place water in small bowl with gelatine. Stand for 2 mins to soften. Half of the cream in saucepan , add vanilla. Bring to boil, add gelatine and remove from heat. Stir until gelatine dissolves. Stir in sweetener and remaining cream. Pour into wine glasses or ramekins and leave in fridge for at least 4 hours. Enjoy

If, on the day, you wanted a piped cream look, then the following could be worth a bit of experimentation in advance. It holds its shape for a while longer than the usual squirty cream nanosecond, but ot something to add too early in the proceedings.

I'm sure other supermarkets will stock it.

real custard - cream and eggs warmed gently - is good. Adding in some gelatin helps with solidity - but don't overdo it - practice first to get a good consistency.

Looks brilliant - I made myself a sponge cake based on almond flour and sweetner - it tasted different but no less nice than the original with some lovely strawberries and cream and a little strawberry jam (no sugar),

I am going to now try your trifle!
