Type-2 in remission

I got a type 2 diagnosis in February with a HbA1c of 59. After some searching around, I did the Newcastle diet based on one of Professor Rod Taylor's books. Today my doctor phoned me up to say that my HbA1c is now 37 and my diabetes is officially in remission.

Since finishing the Newcastle diet, I've adopted a low-carb diet, based on batch-cooking slow cooker meals. As much as one side of my brain is shouting for high-calorie treats as a reward, I'm going to stick with the diet. I like the food and it's helped me to maintain the weight loss from the Newcastle diet, which is a key factor in keeping diabetes at bay. Aside from the health benefits, my wife likes my new trim figure.

That is good result indeed. So many people are reported to struggle to maintain results after the Newcastle diet

Any particularly good or easy recipes to share with us?

Yes, I read that it's hard to maintain weight loss, which is why I'm sticking to slow cooker batch cooking. The recipes pasted below come from the slow cooker books I bought. Each recipe is 4 portions, but I usually double the quantities and do 8 portions of each.

I got the below books from a high street book store - I've linked to Amazon.co.uk for convenience (no referral links!). Aside from being for slow cooker, I chose these books specifically because they included calorie and nutritional info. Until I started looking, I didn't realise how few recipe books include health information.

Summer vegetables & chickpeas

3 Courgettes
1 Aubergine
3 Garlic cloves
2 Red peppers
2 Large baking potatoes
1 onion
1 tbsp coriander seeds
4 tbsp olive oil
400g can chopped tomatoes
400g can chickpeas
8 hours slow cooker
327 cal.

Coconut, aubergine & chickpea curry

2 onions 4 onions
4 cm root ginger
2 chilli
Cooking oil
1.5 tbsp curry powder
1 tsp fennel seeds
200mL coconut milk
300mL vegetable stock.
2 tsp sugar (stevia)
625g Aubergines
400g Chickpeas
1 tsp black mustard seeds

Onion + garlic + chili( chopped) - Fry 2min
Add curry powder, coconut milk, vegetable stock (add salt to taste) boil then add the mixture to the rest of the ingredients in the slow cooker.
8 hours slow cooker

Wow congratulations! That is inspiring. I was diagnosed T2 in July with HbA1c of 105 . Had severe reaction to Metformin so swapped to other awful drugs. Low carb diet & Libre 2 sensor. Have tried to up my activity (18 miles walking at weekend) but hard as BG keeps going hypo. Blood test today & my hard work has paid off & I can reduce these wretched pills. I’m so fed up counting & watching everything I eat - how & when but you reminded me I must keep it up & not undo all the hard work…
