Type 2s: What have you eaten today?

Evening all

The Orkney organic salmon fillets I usually buy were not available this week, so decided to try Alaskan wild salmon. Apart from its striking red colour, the flavour and texture made an instant impression. Yes, I could definitely get used to Alaskan wild salmon!

Yesterday:

B: Two poached eggs with a knob of butter and avocado, seasoned with black pepper plus a wedge of Époisses.
Water to swallow tablet.
Espresso.

L: Salmon fillets baked with broccoli, mushrooms, double cream and lemon verbena.
Steamed carrot batons and French beans smothered with butter.
Water to drink.
Skipped pud.

D Seafood salad using tiger prawns, brown shrimps, lettuce, baby plum tomatoes, celery, Romano peppers, Kalamata olives and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with roasted macadamia nuts.
Water to swallow tablets.

L: Melanzane alla parmigiana, (aka aubergine parmigiana) using aubergine without breading or flour, passata, mozzarella, parmesan, olive oil, oregano, garlic and basil.
I tossed some breadcrumbs with a little olive oil plus grated parmesan and sprinkled on top before baking. (That way, I could serve the topping to those who can handle breadcrumbs, but omit it from my own portion and finish with extra parmesan instead.)
Braised cavolo nero with garlic and toasted almonds.
Skipped pud.
Water to drink.

D: Seafood salad made with crevettes, brown shrimps, lettuce, baby plum toms, celery and salad onions dressed with olive oil and a squeeze of lemon juice, thyme and garlic, scattered with toasted sunflower and pumpkin seeds.
Water to swallow tablets.
 
Evening all

Yesterday:

Water to swallow tablet.
Espresso.

L: Walnut and mushroom nut roast made with onions, eggs and flax 'egg', (strictly no breadcrumbs) garlic, vegetable stock and rosemary.
Steamed Brussels sprouts with toasted slivered almonds smothered with butter.
Carrots, onions and apple peel sautéed in butter.
Water to drink.
Skipped pud.

D: Seafood salad made with mussels and brown shrimps, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives, lemon verbena and salad onions, with a dollop of home-made aioli for dipping, topped with roasted macadamia nuts.
Water to swallow tablet.
 
Evening all,

L: Packed lunch made with leftover walnut and mushroom nut roast.
Romano peppers, celery sticks and baby plum tomatoes with chicory boats for scooping and a dollop of home-made mayonnaise for dipping.
Prawns and brown shrimps.
Almonds, hazelnuts and brazils.
Water to drink.

Mid-afternoon: black filter coffee

D: Smoked salmon and Cashel Blue salad made with lettuce, celery, baby plum tomatoes, salad onions and Romano peppers, dressed with olive oil, lemon verbena and a touch of lemon juice, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.

B: Two poached eggs and scallops, plus asparagus spears smothered with butter, all seasoned with a good grinding of black pepper.

Espresso.

L: Aperitif: dry white wine.
Tuna steaks rolled in finely chopped celery and thyme, baked with red peppers and mushrooms, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed French beans with a knob of butter.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, baby plum tomatoes, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to swallow tablets.

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, all seasoned with a good grinding of black pepper.

Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of thyme and garlic, drizzled with olive oil.
A medley of baked broccoli, leeks, onions, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with pecan halves.

I love reading your menus.

As a newly diagnosed T2 it's really great getting food ideas from everyone and I've just found, and fallen in love with aioli.

I'm always on the lookout for mouthwatering low-carb recipes and this forum provides lots of inspiration. It's important to enjoy our low-carb lifestyle, otherwise we'd never stick to it, would we?

We're pleased you could join us again.

Pasta is versatile and inexpensive, but mostly starch. Once digested, all carbohydrates end up as glucose in your bloodstream, so grains, even whole grains and flour, are problematic for most of us here.

D: Seafood salad made with brown shrimps, mussels, lettuce, finely shredded red cabbage, apple peel, celery, baby plum tomatoes and mustard cress with a dollop of aioli for dipping, topped with toasted pistachios.

Steamed Brussels sprouts with toasted pistachios.
Carrots, onions and apple peel sautéed in butter.
Water to drink.
Skipped pud.

D: Seafood salad made with calamari and brown shrimps, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives, lemon verbena and salad onions, with a dollop of home-made aioli for dipping, topped with roasted macadamia nuts.
