Legend has it , that it was during this period King Alfred was given shelter by a peasant woman on the Somerset Levels and Moors. Unaware of his identity she left him to watch some cakes she had left cooking on the fire.:D:D

8.9 this morning, four weeks after my initial diagnosis.

Probably more to the point is my HBA1C test result which I got from my GP this morning. It came down to 58, from the 70 result that confirmed the diagnosis last month.

There's a lot more to do, but I'm quite proud of that. I'm 8 pounds lighter as well, and that covers the Christmas period!

I've got tons of posts to catch up on! Hope everyone's well and over the cold/flu virus that's been going round.

6.8 last night
7.1 at fasting this morning.
 
APPLE CAKE
6ozs unsalted butter or marg
4ozs soft light muscovado sugar
2 eggs beaten
7.5 ozs soya flour
3 level tsps baking powder
1/4 tsp xanthan gum
3 med cox apples (grated wth skin on)
Cinnamon to taste
Cream sugar and butter, beat in eggs, stir in dry ingredients. You may need to add soya milk to get soft dropping consistency. Gas 5/ 180 deg C in large loaf tin 45 mins to an hour.
2 half inch slices took me up from 5.5 to 6.5 after 2 hrs (6.4) at hone hour

Jan, I like to cook and bake and like to experiment with ingredients. So I've never baked a cake using soya flour before, I'v got some in the cupboard and will definitely try out this recipe. Does replacing soya flour with self raising flour change the texture of this cake, like is it heavier?

Using soya flour doesn't seem to be much difference for this recipe although never made this version with normal flour. You DO need the baking powder AND the xanthan gum which acts as the wheat gluten would. Xmas style cake was dense but fragile but I didn't know abt the gum then and forgot the bp.... :oops:

Back in the good 'ole days, I use to bake Dorset Apple cake ... Yum
I wonder if the addition of almond flour in Xmas style cake would add moisture and make it less fragile... Just a thought :)

I made another with quinoa flour which was better. Added almond essence too made it seem like there were ground almonds in wth texture of flour. The gum will take the fragility of soya flour away. Not tried almond flour yet.
 
Ha!ha! Hardly @beatdise - I'm never going to be twiggy trust me! One more Jean size is a reasonable aim for april, if I get two by July (a year on from starting my journey) that would,be fab! I do need to think of proportion though as I'm tall, 6. 2 1/2", so need some shape to not be a plank!:eek:
Kimbo distance traveled for you though is remarkable. It must be so much fun wanting to but the new clothes. I've gone from 44" to 40" and dropping. It is such a feeling of liberation. So you are MODEL material at 6' two n half....enjoy!
