vegetarian cookbook

I'm 44, been strict veggie for 27 years, been type 1 LADA for 7 years. I find it a struggle, most of the downloadable cookbooks for diabetics include non vegetarian. anyone know of a 7 day veggie cookbook?
 
Rose Elliot wrote The Low Carb Vegetarian Cookbook but it does use ingredients that are processed. How about borrowing vegetarian cook books from your local library and photocopying suitable recipes ?
 
There are lots of ways to adapt meals to make them low carb high fat .. I am also a strict veggie but do have my own hens .. So have lots of eggs to cook with .. Do you eat eggs and cheese?
 
Celia Brooks Brown also has a low carb vegetarian cookbook. I haven't tried all the recipes though.

I prefer to look up Foodgawker.com (it has vegetarian and vegan sections) and look for ideas. It is not a diabetic friendly site as such, but you find some gems.

Or just adapt old favourites. If you would like any help with adapting, I am sure we could help :)
 
Doesn't this site do a meal plan download thing? I think I saw it once, but it was too carby for me personally.
