Vegetarians: What have you eaten today?

Chocolate muffin and soymilk
A bowl of refried beans, lettuce, tomato, avocado, plant cheese,
Salad with lots of veggie toppings
 
Yesterday:

Oats - oatmilk - banana - nuts - raisins - jam - seeds - wholemeal spaghetti - vegan bolognese - brown rice - wholemeal bread - vegan cheese - nutritional yeast.

I'm not one for much breakfast but today was the same as pretty much every other day: two eggs. Sometimes it's poached eggs, sometimes its fried eggs. If I could sort out an appropriate pan to cook them, sometimes it could be scrambled eggs!
 
Coincidentally, I had scrambled eggs this morning: 3 eggs with grated cheese. However, (this will be sacrilege to many) I used the microwave! I find the trick is to set the power to 50%, stir often, and remove the eggs when there’s still liquid visible as the eggs will continue to cook. I also sprinkled Tabasco over the eggs before eating.

I’ll soon be eating (air fried) halloumi slices and salad for lunch. Unsure what I’m making later (was a lentil lasagne yesterday, but that was leftovers), so need to cook from scratch tonight.
