Vegetarians: What have you eaten today?

B: raspberries, soya yogurt, pecans, coconut, ground ginger
L: falafels, hummus, cherry tomatoes, cucumber
D: spicy veg and vegan quorn pieces stew (daughter made it - very nice)
Snack: 2 Ikea vegetable balls to try. I had no idea they did these!

@PurpleArmadillo I will start the almond feta tonight so I can bake it tomorrow.

Regarding my Quorn savoury eggs: sorry to disappoint, but I didn't make them, just bought them from the supermarket!

I didn't make the hummus this week either - I often do, but was too busy/tired (I know it only takes 10 mins if you use tinned chickpeas, but I can't tell the difference on a sandwich!).
 
B: Alpro yoghurt with strawberries & blueberries. Actimel.

L: "Less than full English" - no prizes for guessing the missing ingredients.

D: Caramelised onion, mushroom & avocado quesadilla. 2nd attempt at lowish carb dinner.


It's not messy; it's informal!!

In reality, it was very messy: the quesadilla was too full
 

That quesadilla looks so good! Haven't had a tortilla for such a long time *sigh* And messy is good! Taste over presentation every time in this house!
 
I love hummus and don't make it myself anywhere near as often as I should! I love bean dips too ... red kidney bean and garlic is probably my fave. Beans are so difficult when you're low carbing though

I need to do more with edmame beans. The tinned ones have less than 5g per 100 of carbs. Might try to make some kind of dip or spread with them this weekend.

I'm hoping I can do some baking too. I've ordered some new Good Hemp High Protein Flour which should arrive tomorrow. Can't find anything about it on their website, but hopefully there are some recipes on the pack. Insanely pricey though, even at cost price!
 
@PurpleArmadillo The almond feta is resting in the fridge now for baking tomorrow. My sieve is a bit bashed so it might turn out a funny shape. Good thing you mentioned you like taste over presentation lol

I reckon it's 35g carbs with a large Old El Paso wheat tortilla and skipping the BBQ sauce. If you like a kick, it could benefit from some chilli; perhaps some coriander.

@PurpleArmadillo The almond cheese does not taste like feta but is very, very tasty in its own right! I think you are supposed to leave it to cool completely before scoffing it. It might taste different in the morning. I highly recommend it.

 
B: Croissant & cappuccino.

L: Baked avocado & eggs. (Not a success - I didn't scoop out enough avocado for the eggs, so there was egg white everywhere and it wasn't as tasty as it looked!)

D: Pancakes stuffed with beans & veg. Chips.
 
I have just been grazing on cheese and onion butties today (like last night's dinner). After a night in the fridge, the almond feta is sliceable and addictive.

I also had a ginger shot that my daughter prepared (root ginger, apple and lemon blended together).
 
Brunch: Sainsbury's new m/f burgers, cannellini beans in herby tomato sauce

Dinner: lettuce leaf wraps with Jamaican spiced falafels, tofu tzatziki, roast red pepper

I've had a bit of a disastrous day.
B : fat bomb
L : nothing
D : Linda Mcartney rosemary sausages, gravy, runner beans and a few mashed potatoes from the garden
And because I spent most of the day either at the vets, or worrying over Nika my dog, I ended up so hungry that I snacked on Pringles and a cereal bar
 
B : Didn't have any again! Hubby put a slice of Bergen in the toaster but I was too preoccupied with vets appointment.
L; Raw cacao coyo yogurt. I'm working my way through all the flavours at work. I found this one too sweet. Natural and vanilla are much better and lower carb.
D : Courgette soup with garden glut plus a very few garden potatoes. I've settled on Vecon as my go-to stock. Lower carb and more concentrated that the others I've looked at.
Snacks : A couple of slices of Bergen with marg and mushroom pate before dinner. Not good, but making up for not eating anything all day!

Next year I'm going to have to re-think my planting! I've always grown lots of potatoes, but I now have masses of them and can't eat them! Looks like I'll be switching to cabbages and cauliflowers
 
B: Muesli. Actimel.

L: Grilled focaccia with hallumi & roasted veg at Costas.

D: Pizza, chips and salad.

L: Cheese & onion toastie

D: Lentil and bean chilli & baked potato.

Snack: Ice cream cone
