Vegetarians: What have you eaten today?

B: strawberries, soya yogurt, pecans, cinnamon
L: 2 cold Linda Mac sausages, tofu tzatziki, lettuce
D: 2 falafels, roast courgettes, leftover herby cannellini beans
Snack: peanuts

D: Linda Mac quarter pounder, celeriac bake*
Snack: 85% choclolate

*bake inspired by this recipe using almond feta with layers of celeriac, garlic and black pepper.
 
@PurpleArmadillo We gave up growing spuds in favour of rhubarb. It is pretty low carb and low maintenance. Have you heard of Vivaldi potatoes? It is claimed they are lower carb.
 
Much the same as yesterday except lunch which was hummus, cucumber slices, cherry tomatoes and walnuts.
 
Same breakfast and lunch as yesterday.

Dinner: chickpea and mushroom curry, coconut lime cauli rice. Will be eating this all weekend!

B: Poached egg on toast

L: MaccyD's I'm ashamed to say (had to eat at a service station - worse than I remembered!)

D: Lentil lasagne and French beans. A healthy option to make up for lunch. :-)
 
B: Croissant & cappuccino

L: Hotdogs (with quorn frankfurters) and all the trimmings

D: Chinese-style stir fry (quorn pieces this time)

To clarify, yesterday's McD was a "vegetable deluxe burger", although the only "deluxe" seemed to be shredded iceberg lettuce
 
@Ledzeptt No clarification needed. The word "deluxe" does seem funny now that I think of it!

Random food choices today:

B: leftover chocolate tufu pudding
L: tear-stained toasted Lidl roll with marg. They have discontinued them at my local shop :spitoutdummy:
D: leftover curry and cauli rice
 
Nothing exciting:

B: Muesli. Actimel.

L: Hummus salad sandwich and 2 leftover frankfurters that no one else wanted to try at the weekend!

Snacks: Croissant & cappuccino, almonds and popcorn (still trying to fatten up!).

D: Lentil spag bol. Greek yogurt.
 
Brunch: plum with almond butter
Dinner: Jamaican jerk seasoned bean and veg stew with cauli mash
Snack: peanuts
Hi @Avocado Sevenfold and I am going to be really cheeky now! Do you have a recipe for that gorgeous sounding Jamaican jerk seasoned bean and veg stew? My wife and I are drooling into our Tommee Tippee bibs here
 
LOL @Welshman1952 Not cheeky at all!

No proper recipe. From memory it would have been veg (the usual suspects are peppers, courgettes and mushrooms, maybe onion) with beans (either kidney or black) in chopped, tinned tomatoes.

For the stew I used this pre-mixed blend but it contains sugar. When I later made the Jamaican spiced falafels, I used the spices listed in this recipe then added some extra chilli for luck. I would use this for the stew in future as you know what is in it.

For quick cauli mash I use frozen florets, microwaved, add veg marg and black pepper, blitz with a stick blender. Very creamy.

It's really annoying that I planted so much of the garden with spuds just before I was diagnosed. Now with the boys off at uni, and OH wanting to eat what I do (probably he just doesn't want to cook for himself!) they're just going to waste.

Next year I will be planning the veg garden differently! We'll have to start a seed swap thread :)
 
I'm still on my 101 ways to eat courgettes mission!

So today was

B : 1 slice weightwatchers bread with granovita spicy tofu pate. I bought this bread because the Bergen was sold out. The slices are beyond thin and full of air, and if you toast them they're burnt in a flash, but it's kind of nice to have something approaching ****** sliced white for a change!!!

L : a wheaty hemp bar and a few salted crisps

D : leftover curried courgette soup with another slice of the ww bread

Plus coffee with hemp milk (I'm quite liking this, but I think hazelnut milk's my favourite). Working my way though all the plant milks as I'm so sick of soya. And a vivani mini vegan chocolate bar. And an Aldi 85% chocolate bar. Oh, and a teny portion of the oven chips and ketchup that the OH had for his dinner!

I had the same breakfast and lunch today (yogurt/nuts/berries/spice, hummus etc) Tonight I am having a LM quarter pounder on a Lid roll.
 
B: Fried eggs on wholemeal toast (homemade but high carb)

L: Hummus salad sandwich with the homemade bread

D: Cheesy black beans and brown rice.

Snacks: 99% Lindt chocolate (not a typo). Boursin on crackers.
 
Brunch: golden turmeric milk
Dinner: m/f mince with cauli mash (served retro school dinner style)
Pudding: peanut/chocolate/orange zest clusters
