Vegetarians: What have you eaten today?

    B - green smoothie; kale, spinach, avocado, almond milk, raspberries
    L - 1 x oatcake, houmous and 2 sun-dried tomatoes, plus more houmous with carrot sticks
    D - pesto crusted salmon and salad (mainly veggie but since dx eat a bit of fish twice a week - purely to add variety to protein sources as my usual favourites, lentils and beans, are spiking my bs)
    snack - tesco natural soya yogurt

    Well today 'lunch' was a very copious fest to celebrate my aunts' 90'th birthday. Served as breakfast for me too, as I rightly figured it would be a waste to eat breakfast only to be full when getting party food from 12 to 4 PM. It involved all sort of things not to be mentioned in either a vegetarian nor a diabetes thread, so dinner was a thin slice of bread with a lot (read as much as you can fit without everything falling off) of grated raw celeriac with mayonaise, black pepper and a bit of salt. I managed to get my blood sugar back to normal by now as well, despite the icecream this afternoon :)

    B: full fat yogurt and flaxseed
    L: cauliflower cheese (leftovers from yesterday)
    D: tofu with courgetti and broccoli/kale/seaweed "rice"

    (microwave steam bag of broccoli / kale / seaweed "rice" was from Iceland - recommended by member on here- @Key_master _ Thankyou - it is yummy and change to caulirice)

    L: salad leaves (kale, spinach, rocket) avocado
    D: spinach and cheese omelette

    It made a lovely change from my usual cauli rice/mash or courgetti, I wish I could easily find seaweed, might have to have a trip to coast at half term :)

    B - coconut yogurt and mixed seeds
    L - feta, onion omelette, red pepper and carrot
    D - tomato and coconut soup (made a batch yesterday!) with parmesan, then a soy yogurt

    It's over 20g of carbs per portion, but on testing, for me, it does very little to my blood sugars, guess because of all the coconut milk. It's like a nice cream of tomato soup, and the recipe makes 4 portions. :)

    B - soya yogurt
    L - protein pot of 2 boiled eggs and spinach, plus carrot sticks with houmous
    D - tomato and coconut soup, then some nori sheets wrapped around tofu - a last-minute improvised addition as was hungry
    snack - 1 oatcake with peanut butter

    B: 1 boiled egg, some mozzarella cheese, 1 slice of whole grain bread, some grape molasses (for b12 deficiency)
    L: 1 big apple, some salad
    D: some leeks with olive oil, 1 cup of yogurt
    S: 1 cup of green tea, dried grapes

    D: cauliflower burritos, ayran (a very popular beverage in my country), 1 slice of bread

    B - 2 oatcakes with peanut butter
    L - lo-dough wrap with avocado, feta and red pepper
    D - lo-dough pizza with tomatoes, bit of goat cheese, yellow pepper, red onion (edited to add 2 squares 85% dark chocolate)
    snack - cashew nuts
    (that's my small pack of lo-dough used up in one day! - lovely as a wrap - not too sure it worked as a pizza base)
