Vegetarians: What have you eaten today?

B: golden milk

L: salad with tofu pieces, hummus, walnuts and sriracha mayo

D: LM sausages, cauli mash, green beans with shallots
 
I've not posted in a while because I've been ill. Now I'm getting better in hospital.

Lunch was an interesting puréed lentil lasagne with mash potatoes, carrots and green beans. I've attached a photo to make you all jealous:

I'm not complaining as providing food to a veggie who can't eat solids must be difficult.

Calculating my insulin was a hit/miss due to the lack of labelling information: I just had the strange ingredients and portion size to go on:

Don't worry: I'm not going to be posting all week unless I get very bored :-)

I hope nobody minds this change in format...

Here's a photo of my lunch; everything's puréed. You can probably recognise the accompanying vegetables easy enough, but what is the main (brown blob)?

It's not chocolate fudge cake, nor is it traditionally served with these accompaniments (it would normally be a meal in its own right). Feel free to play spot the difference with my Monday meal.

And yes, I am bored!

@Ledzeptt I have heard that hospital food for diabetics is a bit odd, so my best guess is...

coco pops cake
rice pudding
3 mini milk ice lollies
a mint aero with the chocolate licked off it

What do I win?! :joyful:

Well, it was actually lentil spaghetti bolognese (obviously), with mash potato, carrots and parsnips - each puréed.

No good for LCHF.

Both of you deserve a prize for imagination, enjoy an early Christmas present:
 
Would it be tactless to mention my Mexican dinner party last night when Jimmy Page is eating brown mystery pie this week? :bag:

It was bean chilli, coconut lime cauli rice, guacamole, bean salad, shredded lettuce, spicy veg, tofu sour cream, grated Violife cheese, stuffed mini peppers* and for the carbi-folk - wraps, doritos and actifry potato wedges with peri-peri seasoning. Pudding was Swedish Glace ice cream, cherries soaked in cherry brandy and homemade Ferrero Rochers. Loads of wine. All vegan, fairly low carb, no complaints.

*These little peppers are good party food. Half a mini bell pepper lengthwise to make a boat. Scoop out the seeds. Pulse equal amounts of walnuts and sun dried tomatoes (from a jar in oil) with a little smoked taco seasoning in a food processor. Not too much as you want a bit of crunch from the walnuts. Spoon into the boats and bake for 20 minutes. Top with some Sainsbury's dairy free feta and bake for a further 5 minutes.

Sounds fabulous (not tactless, but I am jealous!).

I watched BBC Saturday Kitchen this morning and enjoyed the look of the aubergine "hell".

Anyway, I'm on the mend and allowed to eat soft, rather than baby food now :-)

Making Mexican tonight ..
I will have a ready made wholemeal tortilla to night .. yum

And I must say, before I forget .. Waitrose , box of three lollies , coconut soya ice , coated in chocolate
Vegan , no added sugar , dairy free etc ..
can't recall the box name at the moment , but in Waitrose , new range x

The lollies sound good.

My meals:

B: Rice Krispies (it's like being a little kid again)

L: Minestrone soup, strangely lacking in pasta. Jacket potato with beans & cheese (not allowed to eat the skin!). Low fat/high sugar (healthy???) yoghurt.

D: Same soup. Tagliatelle in a cheese sauce with broccoli & cauliflower. Small ice cream (may as well, as sugar was similar to yoghurt).

Luckily I don't eat LCHF, because there's nothing on the hospital menu.

All prepared , spring onions , avocado, the beans , wraps and sour cream .. I think it's that time of year :)

Hi veggie friends .. hope all is good , last Sunday of November

Just enjoyed a lovely cauliflower and leek cheese roast .. parsnips and carrots of course ..

Later I will have the ice cream the alpro one with fruit compot, that I had stored in the freezer :)

This morning for breakfast I had a burger on toast with melty cheese (Fry's, Burgen, Violife). Tonight I will have the last of the Mexican leftovers.

Anyway the out come two boxes for £7 not cheap , but alpro still going well ..:)
