Vegetarians: What have you eaten today?

I wasn't organised today, but I was lazy/tired after work, so I made a quick meal by stirring in some "Philadelphia light cheese with chives" into cooked pasta and then adding some mixed beans and seasoning.

It turned out to be quite tasty - no good for LCHF/vegans though.
What I great idea I would enjoy that :)
 
I must do this as well ..Is it worth getting sprial gadget .. I always just roast my cauliflower or chop up in a rustic way and stir fry .. not a big gadget person ..

My daughter got the Thug Kitchen cookbook from Santa and there is a recipe in it for a creamy cauliflower sauce made from cauli, nut milk, garlic, lemon juice, olive oil and miso. Sounds interesting. It reminds me of years ago when I did Slimming World and people would blend up boiled cauli to make a curry sauce. People online raved about it and said it was like curry sauce from the chippy. Not sure about that claim lol

We use our spiralizer a lot and grow courgettes so it earns its cupboard space :)

I know I will end up getting one , a sprializer ...
I just don't want a gadget I just keep in the cupboard because that's me lol ..
I used to love growing vegetables I had a productive green house to ..
But these days my garden is more wildlife which I like .. bird feeding duties four times a day .. they get through more food than me x

Did you ever see a TV programme with Alys Fowler in which she grew flowers and veg all mixed in together? It was beautiful. I wish I was creative, but my garden is a riot.
 
Brunch: scrambled tofu and mushrooms on Burgen toast.

Dinner: Salad sandwich. The aforementioned spriralized Thai salad was really good. I added edamame beans and think I would add some chili to the dressing for a bit of kick next time. Spread hummus on Burgen bread and loaded with salad . Was supposed to be one slice, but ended up as two. How did that happen?!

Yes I have seen her on tv .. creative .. good to see flowers and veg growing together ..
My garden has shrubs now and wildlife ..
it's a garden where I could keep chickens though .. free range own eggs , and I have to force myself to eat eggs .. not very often

And a dear which waits for bread and bird seeds to be put out ... very cute x

Funny because you ate two , good idea .. x I see what you are doing with the carrot now , you have made the salad look very nice

Today:

B: Muesli with Skyr

L: Bean soup (very thick, unsure if it was technically a stew!)

D: Quorn & veg pie, potatoes, kale & carrots. Coffee & walnut cake (shop bought).

Aaaaww a deer! I am picturing you as Snow White now with all your visiting woodland friends :joyful: We just have scruffy pigeons and a gang of foxes. Lots of foxes.

Ordinary day for food, except I made a pudding using Skyr, chia, linseed and then topped with kiwi and blueberries. Not bad for carbs, high'ish protein, but low fat.

Same meal as yesterday for me .. :)
I will have some alpro ice cream tonight ..and I have eaten all the chocolate fridge cake .. I will make another at the weekend ..

Regarding the wildlife I should tell you .. :)
We buy six sliced brown loves per week , and 12 packets of Tesco digestive biscuits .. which we crush for the birds ..
They have a very good diet , the robins and blackbirds loved grated cheese .. that's three times a day , we keep a box grated for them in the fridge .. this is extra to the bird feeders .. ..plenty of regulars lol x

Love blueberries and kiwi fruit ...
I must do more with the chia seeds I have bought some .. :)

Cold and snowy and horrible here so comfort eating today and yesterday. Pie and jelly!
