Vegetarians: What have you eaten today?

Tell us what you have eaten today ..

This is a forum for vegetarians .. So please no meat references ..
A Vegetarian is someone who lives on a diet of grains, pulses, nuts, seeds, vegetables and fruits with, or without, the use of dairy products and eggs. A vegetarian does not eat any meat, poultry, game, fish, shellfish* or by-products of slaughter.

Breakfast was yogurt/muesli/fruit
Dinner: tomato/pasta/veg bake with lots of sage seasoning it (too big a portion)
Tea: yummy version of a pasta bake..... cauliflower, broccoli, carrots cooked how you like them, sliced cooked veggie hot dogs mixed in with the drained veggies... cheese sauce made with warmed double cream with grated strong cheddar melted in with black pepper to season....stir sauce into cooked veggies...who needs pasta ..... I thought of tipping it into a dish and topping with grated cheese and browning in the oven (used to include bread crumbs in that) but didn't know if the sauce would be stable

B: Egg on toast

L: Left over (burnt) pizza - good job I have my own teeth :-)

D: Shepherdess pie & collie (not the sheep dog)

Snack: Blueberry muffin - v naughty but office celebration.

Snap! We had shepherdess pie tonight too made with veg, mixed beans and chopped up Linda Macs. I put the cauli through the ricer (I blame Masterchef) and it was quite good. It drains off the water so the mash is drier and fluffier.

@Avocado Sevenfold

Great minds and all!

Is that your meals for April? 101 variations on LM sausages :-)

P.s. Asda are selling them for £1 too, so I guess many of the supermarkets are price matching. Enjoy!

I'll have to check what Sainsbury's are doing....they used to do one if their own quite like the LM one but stopped doing it. They have one that is more real sausage-like but very chewy..not nice. Don't like Quorn ones either unless in a pasta bake .

I've been off food, but back to normal yesterday so:

B: Egg on toast

L: Quorn slice & salad sandwich

D: Pizza (which I ruined by overcooking!) and salad

Snacks: Popcorn. Satsumas.
Hello .. I hope you are ok , this on and off diet is so hard ..
Glad you were able to eat a bit better .. I like your menu
Take care Kat x

Sometimes I do a mac cheese I just reduce the mac and add more veggies still the same x
I still have not bought the healthy Tesco bread that is mentioned x

B: golden milk

L: Tesco hp toast with peanut butter, cherry tomatoes

D: grazing on snacky things. Toasted Lidl fingers with hummus, peanuts and M&S basil & garlic marinated olive selection (olives as big as your fist)

Yesterday I was awoken by the worst ever leg cramps. Could see the muscle spasming and contorting. Gross. Thought I was a goner. The leg was sore all day after it. Today I am waiting for the amazon fairies to bring a bottle of magnesium with potassium.

Yesterday I had:

B: a glass of Supergreens drink and an avocado

D: chilli made with veeg mince, veg and mixed beans. Guacamole and a few Doritos

Drank 2l of tonic water and had a bath in Epsom salts
