Vegetarians: What have you eaten today?

Hi @Kat100

I hope you had a good Easter. My dog wants you to throw the ball for her...

...I've been doing it for the past 2 hours and I'm bored now (she isn't)!

@Avocado Sevenfold Good luck with your Hollyoaks diet

Today:
B: Muesli

L: Mushroom & feta Higgidy pie with salad -> sat outside in the garden for a pleasant change :-)

Planned D: Nut roast (leftovers), chips, veg & gravy

B: Muesli

L: Potato cakes. A doughnut (office birthday celebration!)

D: Spag Bol (lentils) with salad. I remembered to add the nooch @Avocado Sevenfold recommended - the good news is that it didn't taste like Parmesan; the bad that it didn't taste like much of anything, perhaps I didn't add enough?

Or was it hooch she suggested? :-)

Quick update on the first week of my Hollyoaks diet

(cheers, mate! lol)

I have not cooked a full meal this week. Instead we have just been making little random dishes when we can be bothered and adding them to the fridge. So now we have like a buffet in the fridge :woot: Come in from work, fill a bowl with a little bit of anything or everything.

Also been trying a few new things such as beetroot juice and watermelon fingers. I am shocked at how quickly my cravings have gone. So it's all good :cat:

B: Granola - tried a high protein (lower carb) one from Eat Natural. Tasty.

L: Hummus & salad sandwich - homemade hummus, so #hummuscrisis avoided in this household, at least until the chickpeas run out :-) I also had some hula hoops and nuts.

D: Bean & lentil chilli (no chillies for me though) with rice

Good man. We have a 2kg bag of dried chickpeas which should see us through these dark days. Stay strong :cat:

B: Granola

L: Hummus & salad sandwich

D: Chinese - spring rolls, quorn & stir fry veg (omitted my usual noodles/rice and just doubled up on veg)

B: Egg on toast (the soda bread I baked previously and froze)

L: Cheese & mushroom omelette & salad

D: Lentil & kale burger with sweet potato "chips"

Snack: Wispa

I hope you all had a good May day bank holiday (if you're in the U.K.)!

@Ledzeptt Looks great. I am mad for olives at the moment. The bigger the better!

Tonight's bowl of randomness from the fridge buffet...

Veg and chickpea korma on lettuce, coconut lime caulirice, satay seitan, ginger asparagus

... and there's always 4OD if you want to play fast and loose :-)

Good luck!

Ps. I think I went overboard with the trademark this time!

Today:

B: Granola

L: Cold sausage sandwich (leftovers)

D: Quorn & veg pie with lots more veg

The main meals were low'ish carb (by my usual standards - about 90g in total), but I've had a huge amount of sugary snacks as my BG has been on a crazy rollercoaster ride today. Thanks to my new toy (Libre), I didn't let it go too high or too low - see posts elsewhere.

B: Egg on toast

L: Cheese & onion toastie

D: Bean & lentil chilli with (my first ever) cauliflower rice - quite pleased with it, although I used a recipe from this forum with coconut oil that didn't really go with my very mild chilli. Strawberries & Greek yoghurt

Snack: Olives - encouraged by @Avocado Sevenfold to buy some more :-)

Just in time for Summer!
