It shouldn't be too difficult in Italy as they eats loads of good fish and veg ......... and of course pasta! If you cannot cope with regular pasta, let her know and see if she can get low GI pasta or something. Otherwise stick with the veg and fish/meat and loads of good wine (in moderation, of course!! :lol: )
The hardest thing for me is to leave the bread alone!! But usually they are good a providing some alternatives, if you explain you are diabetic and cannot eat the high carb stuff. There is a kinda of Walnutbread - brown/wholemeal and low GI - great stuff to have a little nimble with the oils/vinegars instead of the regular white breads.
They got so much wonderful food there and always seem to happy to provide alternative, if they know how/what. Eating is a big social event at all times and they usually just want you to be part of the family, so allow yourself a few treats, just make sure you test so you know where your Bg goes.
Is your GP supplying you with test strips? If so, explain the situation to him and ask if he will provide some extra for you to ensure good control whilst away ........... after all, he can "only" say no, right? :roll:
On my hols (the first since diagnoses) I found that I could cope with small portions of the "naughty" stuff, like pastries, low GI breads, ice cream and a little birthday cake too!! It was as much about portion control and one spoonful of great icecram is wonderful, especially in a social setting.
Italy has one of the best "diets" in the world and if you live with a typical Italian family they will feed you SO well, diabetes or not!! But let them know in advance, I am sure they will be more than happy to accmmodate you, especially since they do "special" diets already - it might not be all that different, when it comes to it.
