Many thanks for your answers. I really don't think I could up my calories as I am so full all the time that it would be impossible to eat more. I only have 2 proper meals a day, breakfast ( 2 eggs or kippers as main part) at lunchtime usually a coffee with fresh cream or a few blueberries with fresh cream and then about 6.30 a main meal with meat, veg roast or fried with olive oil ( often slices of cauliflower brushed with olive oil etc) and late evening a glass of unsweetened almond milk. What is wrong with my diet please to make me put on weight?
I should add by meat I mean, chicken, turkey, beef or pork
So are you eating when you get up and then dinner at 6.30? some people have experienced better results by reducing the window of time that they eat in so you could try breakfast and lunch or lunch and dinner. I always skip breakfast so eat at about 1 pm then dinner at about 7pm. I start the day with tea.. but you could replace breakfast with the coffee and then have lunch and dinner.. this worked well for both weight loss and sugar control for me.
I don't thin there is anything wrong with your diet its just that the weight loss will probably not be a straight line progression.. the initial "whoosh" is because when you stop eating so many carbs your body releases water so you have the drop. Then you need to adapt to be more fuelled by fat which can take a few weeks.. so you have been going less than a month. Don't despair!
As people above have said maybe try some more fats.. butter on the veg for example so your body doesn't think it is being deprived of food. I'm afraid that it seems a bit more difficult for women to get such immediate results as men but give it more of a chance and the weight should come off. You didn't put on the weight in one month so it won't all come off in that time either..
Your diet seems fine and bullbiker has made excellent suggestions. As I said, you could try intermittent fasting and supplements alongside your diet. Weight loss is not just about dieting : are you drinking enough, are getting good quality sleep, are you exercising (30 min walk a day), are you relaxing etc.? Here are more pointers :

I have exactly the same problem. Started the 2nd week in January and lost 3.5 kilos. Seem to have put on 2 kilos this last week. The worst thing is my husband who is not diabetic decided to eat same as me but with slightly more carbs because he has a physical job. He has lost 12pounds!!! Feeling a bit low now. If you still have a cycle, you could find your hormones are in play? At certain times of the month fluid can be retained.

Based on your percentages it seems you're eating around 1200 calories. That's about where i am and if I eat much more I don't feel well. Stuffed.
Some people need to cut out all dairy in order to lose weight. Even just a few bites at night, the scale will be up in the morning. Also look for other food intolerances as they too will stall weight loss. I eat more fat than you and about half the protein you eat. We only need a certain amount of protein for maintenance and repair. More is not needed.
Above all, I listen to my body and meter. I don't count calories and I eat small meals or I get too full. I don't like to bog down my digestion.
Berries only with cream but not too many.I'm having the same problem with weight gain on a low carb diet type2, diabetic for 17 years, no medication). I am finding it hard to up the fat without the protein in order to eat enough calories. I don't have enough exercise due to other health problems but I am trying to remedy that - walking is difficult. Could do with suggestions about food and can anyone tell me about how much fruit and what I can eat with cream?
