I have a feel questions re low carb diets

What options does a veggie for a low carb - esp breakfast? I was looking at having Oatbix for breakfast but I think that is too high carb.
how do you get fibres when you're having low carb?
can someone please list what their low carb diet consists of so I get an idea of what all you guys are eating?
 
how did you manage to get your hbA1C levels under control? Have you also lost weight - if so how much? thanks for any info @ julifeiend.
 
RE: breakfast.
Do you eat eggs or cheese? If so, there are all the omelette, boiled/ scrambled egg options and we often have cheese with pumpernickel and salad. Then a popular choice on this forum is plain full fat Greek yoghurt with a few berries. But if you are strictly veggie, what about mushrooms. I often fry up, in butter (or olive oil) with tomatoes and tofu. Why not have some sort of lentil dish (e.g. a daal) , or something chick pea based. Half the world breakfasts in this sort of way, it's only the West which thinks the only possible start to the day is cardboard style cereals, soaked in milk!

yesterday I had almond pancakes with stewed spiced plums and yogurt, less than 15g carbs and low GI.
