What do you have for dinner?

Lasagne last night, (with salad instead of the garlic bread I used to have) and fish and chips tonight ( but less chips, more veg and no bread to make chip butties :( ).
 
I tend to have Cous Cous quite often, I make burgers and use lettuce instead of a bun, a lot of home made falafel and soups - my current favourite is lentil and bacon soup, I love it!!!! I'd like to try something I saw on 'save with Jamie' where he put cauliflower into a food processor and blended it up to make a rice substitute with curry - I have heard of cauliflower being used quite often as a low carb option. I also like kidney bean and cumin burgers right now.
I have always loved food but since being diagnosed it has really made me take an Interest in cooking from scratch, it's fun!!!

Try some pearl barley as a rice substitute too. Depending on what you are having with it, you can add some stock or even curry powder to the water whilet it simmers. Or, you can cook it as you would rice in a biriani. You tend not to need much off it either. A little goes a long way and it is low GI,
 
Tonight a recipe that my daughter got from a weightwatchers book.
Basically a chicken balti with potato and spinach.
(chicken/onion, curry spices or balti paste, some par boiled small new potatoes browned in the spice ,chopped tomatoes and finally a lot of spinach put in towards the end of cooking)
Quick and easy, I have to take less insulin than the carbs suggest and so far have always had good morning levels the next day ( and I don't know why either)
 
A baby leaf salad with beetroot, cucumber, spring onions, pickled garlic cloves and Stilton cheese, served with steamed salmon, coleslaw and a wheat & rye roll from good old Lidl :)

Heres a good recipe I think-
Get some lean mince meat.Boil it till cooked in water then rince through removing all the fat.Dry fry it with onions, corgettes ,mushrooms ,peppers, tomatoes and celery till a little bit brown.Add low salt oxo cube in water to cover veg then bring to the boli for 2 mins.Pour into a casserole dish put lit on and into the oven for 30 mins or until all veg cooked.Then grate parmesan cheese on top (just a small ammount) or if you dont like parmesan use paprika or mixed herbs before puting it in the oven -then put casserole under the grill to brown.You will find this is tasty warming and filling and if you make to much you can warm it through for another day or freeze it. Alternatively cook all above as Ive said then to create a soup wizz everething up it lovely and you can use it as a snack if you feel hungry between meals.Try it and see what happens to your sugars
 
Tonight I had a veggie chilli made with quorn...and a small jacket potatoe. .......tomorrow it's spinach with tofu and a little rice....
