"What have you eaten" Parallel Chat

Wednesday
Can't remember breakfast
Very breezy walk
L: 2 drumsticks, ham and coleslaw
D: venison burger with mushrooms and blue cheese. Came with chips, of which I ate too many. I must remember to start asking for veg instead.

Thursday
B: 2 scrambled eggs on ham
A 2 and a half hour hilly walk
L: small grilled fish, salad and chips.
Shared 1 scoop ice cream with hubby and 2 dogs
D: beef curry, swapped the rice for green beans, did eat 2 mini nan
1 white wine
Later 1 Irish whiskey

Every day we've been averaging 15000 or more steps but don't think it's enough to offset all the carbs creeping in.
Oh but it sounds delicious

As 1 carton takes nearly 2 days of my food money but only last 1 day.
It all depends on if I have to buy it for 6 dollars or if I can find 1 for 4 dollars.

This must be such a tricky balancing act on such a tight budget @cdpm.
Here's hoping cottage cheese is on special offer again soon.

Fasted until 3pm (not planned or intended, just not hungry)
About 90 minutes strolling around a garden
1 large ice cream, in unexpected sunshine
D: half an avocado, 3 korean chicken wings (but should have read the ingredients in the sauce, 1st was glucose syrup!!!). Beef and chicken curries on Cavolo Nero cabbage. All from M and S
1 glass white wine.

Too much food, too little exercise. Feeling bloated.
 
One meal today, around 6 pm. Chicken meatballs in spicy tomato sauce with some chickpea rice. BG has been down most of the day for some reason - Libre alarm woke me twice during the night and it has alarmed twice this afternoon. Alarm means BG is down to 3.7 or below. Got through a whole packet of fruit pastilles trying to keep on top of it.

You could make your own, if the ingredients are cheap enough or if you have some milk that you may have kept too long:

COTTAGE CHEESE

Ingredients
1 cup milk
1 tbsp vinegar or lemon juice
salt to taste

Method
Bring milk to boil in a small pot
Add vinegar or lemon juice and remove from heat
Stir the mixture until it forms curds (2 or 3 minutes)
Strain the mixture through a cheese cloth/thin dish towel or similar, in a sieve or colander over a bowl
Leave to drain and cool - about 15-20 minutes
Season to taste with salt or other flavourings


You can add flavourings to the cheese if you want:

Garlic and/or herbs
Fresh fruit/berries
Cocoa powder with or without sweetener of some sort
Dried fruits, chopped small
Chopped walnuts

In Waitrose, staff (sorry, partners) compound the difficulties by applying "too good to waste" stickers halfway across the list of ingredients. It's almost as though they don't want us to know!

I've been a bit quiet on here, busy painting the garden shed of a friend (finished now which is a good thing because some tendons in my right arm started to object).
I also had a useful visit with the physio on the stupid arm that doesn't work as it should. I've kept up my daily swims, on some days even twice because I was working close to the sea so I put in an extra saltwater swim. I absolutely love swimming in salt water!
I'm trying to work my way through a book on the history of modern democracy, which is very interesting but also very complicated, and I'm lacking quite some knowledge on history the book assumes the reader has, so it's very slow going with google on the side. Oh well, that'll teach me wanting to read stuff aimed at professionals.

I'm about to go out, first another swim in the sea (I already had my morning swim at my usual spot close to home), then I'll be meeting my best friend, who I don't see nearly enough. :joyful:
We'll be visiting the planetarium of Eise Eisinga. It was built between 1774 and 1781 by Eisinga in his own home, and it's still working!
After that we'll have a party at a mutual friend's place, and we'll spend the night in a very funny holiday house, I'll send pictures!
Tomorrow we'll go for a short sailing trip before she'll head back home.
 
Sea swim didn't happen, party was great, food was different curries, very easy to adapt by simply leaving out the rice when plating, very tasty too :)

My bed tonight will be this barrel. My friend has the larger barrel because she'll be awake earlier and because she may need the bathroom during the night because of her gastroparesis and nausea.

I just had a wonderful night swim (11 pm), which nicely dropped my bg from 6.5 to 5.1. Very happy my friend was still awake or I wouldn't have gone in, I needed a hand to get back out.

:) that's a good excuse I'll remember for next time, when the truth is too embarrassing!

Luckily it was a very spicy sauce, the sort that makes one cough, so we both only had a tiny amount then binned the rest.
 
Sorry, interrupted!!
2 and half hour dog walk, some stunning views, but hubbys app says we only did 11,000 steps which is less than the 17,000 on our last 2 hour plus walk. I don't trust these apps! My legs know it was long and hilly!!!
L: ham and cream cheese in lettuce wraps, tomato, 2 seedy crackers. Mini icecream
D: steak with broccoli and courgette. 1 glass white wine. 1 sq 90%.

Thunderstorms forecast all night. Maybe we'd be safer in a barrell too @Antje77? :p
 
Last day of my trip today. I spent the day cooking while my daughters enjoyed a rare day just the two of them together. I made traditional Cornish pasties to stock in daughters freezer, and canned piccalilli and dill pickles. Looks like an error was made on the pickles as one jar exploded in the pan. There’ll be a jar of pickled eggs to finish up the vinegar. Might take one with me breakfast on the go.
Tomorrow will be a travel day, flying back west all day. I’m feeling much better now and blood sugars are back to normal but the daughter who’s travelling with me is now complaining of a sore throat. Oh dear, that’ll be a miserable day for her.
Breakfast today was egg and local sausage with arugula and tomato slice. It came only on regular sourdough bread roll so I discarded the bottom half and dosed for the remainder.
Lunch I stir fried some of the skirt steak I was using in the pasties with a bit of onion and rutabaga. Served on an egg was very tasty.
Dinner is about to be take out Indian…while I drool over the pasties. Pre diabetes I lived in the southwest and enjoyed them often. Now I try to minimize the amount of insulin required by sticking to low carb.

Raspberries and whipped cream for breakfast.
2nd meal will be sausages and whatever vegetables I can find, especially if they need to be used up soon. I know there's a fairly large courgette, a cucumber, an orange pepper, a couple of carrots, a swede, and some tomatoes. Thinking of what to do with what is there.
 
Rain but no thunder overnight.
B: 3 egg cheese omelette followed by a swift dog walk in a dry moment.
Later the sun broke through, against all forecasts so another dog walk
3pm: our last visit this trip and this year to our favourite fish restaurant which closes today until next Easter.
Shared whitebait as a starter, then main of bream with salsa Verde, a few chips and salads (same as last week, but it was so good) 2 glasses white wine.
2 sqs 70% chocolate with orange (which I'd taken with me to help me not succumb to dessert)
That will be it foodwise for today
