2nd meal spiced lab mince with cabbage.

Neil remembered his PIN and it worked fine, so no problem with him getting money for the shopping without my card.

Tomorrow I may be absent - our new blinds are being fitted so furniture has to be moved away from the windows, which means PC will be disconnected until it's all put back together. That may take a while.

Thursday was a busy day
Early breakfast of 2 scrambled eggs
Then new dishwasher fitted, electrician in for a quote and still out at 09:30 for a day with girlfriends.
11:00 a nut bar
13:00 chicken shwarma with hummus
(I did well to avoid the chocolate biscuits they all had with coffe, and the cake in the afternoon)
18:00 the toppings off a quarter of a pizza
19:00 a glass of wine with another friend

Early night!

Today was family team effort to get a couple of garden gadgets set up. Anyone else ever tried a robot mower??? Got there in the end (we think) but it does seem to like driving off route round a complicated corner and getting stuck.
B: 4 rashers bacon
L: 2 cold sausages with 1spoon coleslaw
D: celeriac mash, green beans and cheese. Ice cream and small slice proper cake. 2glasses white wine

The man didn't come to fit the blinds so now I have bare windows, glare from the fairly grey sky and furniture back in place so that the PC can be set up again. There's no way the man can come until the middle of next week now, if then! The firm is closed for the bank holiday so there's no way of finding out why he didn't come, or why he made the appointment on the bank holiday, if he wasn't going to be working that day. Bit of a pain in the neck because unplugging and replugging everything, as well as moving heavy furniture, was quite a complicated task. We've actually found a cable that was plugged in but we can't work out what it was attached to. Something in the system will turn out to be not working, but it's not obvious yet.

Can't remember yesterday's breakfast but 2nd meal was salmon, tomatoes, onion, garlic and lemon, all roasted together.

Breakfast today was a Matzo cracker with cheese. Bit of a rush because I was still thinking the blinds man might come.

2nd meal will be some spiced beef mince with some defrosted Bombay potatoes.

I usually drink about 8 cups of tea a day but on Thursday I had several cups of coffee instead and just one cup of tea. My BG was much more stable around the 6 mark, so yesterday I had only coffee, no tea, and again BG stayed around 6 all day (until the evening when I did something very silly, which I am not even going to discuss which put my BG up to 13.8, where it remained until this morning. Back to the 6's now though.) I am putting leaf tea on the shopping list to see if that makes a difference, if not, I'll have to stop drinking tea.

Happy Easter everyone. Off to my sister’s for lunch today. Will I be able to resist my niece’s Mini egg cheesecake, hmm probably will have a tiny piece just to be polite! We usually take the dogs out afterwards and my bloods have been very good lately so think I may have a treat although it will probably taste way too sweet:cool:

Breakfast is heating at the moment: sausages, onions and the last of the Bombay potatoes from yesterday. That should be a one-a-day meal.

PS Just had a call from my dear friend who needs some help with entertaining some people at her son's house in Stornoway - son and family have had to go to Uig because his father-in-law is sick but these folk can't be put off at this late stage. So must make a quick veggie dish and she is going to make rice (she's Persian) to feed these people and occupy them until son and family can get back.

Yesterday was shopping and errands.
D: was a triumph of steak (cheap from lidl) cooked to perfection in the airfryer with crispy chips (I had 6) and mushrooms slowly cooked butter with cream and lots of black pepper added at the end. Even hubby who is master of few words and king of understatement said it was Good!
A small ice cream
A brandy with soda

Today was family visitors
B: 1 crispbread with cream cheese and herbs
Rest of morning spent prepping lunch.
L: whole salmon stuffed with cream cheese, dill and parsley. Served with green beans, mix of carrots, swede and parsnips in honey and mustard ( only a spoonful for me), olive oil roasted potatoes
Desserts, carb eaters had cherry bakewell sponge with hm rhubarb ice cream. I had no sugar jelly with rhubarb and a little ice cream.
White wine was drunk

Late afternoon a slice hm simnel cake

Later
A chunk cheese.

Probably too many carbs, but life has to be lived and celebrated.

Today I was introduced to okra. I've seen TV chefs use it, but it isn't available on the Island so never had a chance to try it. All the same, I thought I wouldn't like it (nasty, slimy stuff). My friend has just come back from the mainland and, at a farmers' market there, she found okra. She had never used it before either but she bought some and made a kind of stew with aubergine and tomato with it, which I tasted and, it was pretty good. There must be other ways of using it so I have ordered some from Amazon and will try it. I had a quick check online and saw that there are a few different ways of cooking it.

My friend's sister lives on the mainland and is T2 diabetic and says it is useful in controlling her diabetes. If so, it's worth knowing.

I also noticed on Amazon okra powder which can be used to thicken stews and so on, but it is low carb, so I ordered some of that as well.

Does anyone have any okra cooking tips? I gather that to avoid the slime, the okra shouldn't be cut or even severely trimmed.

Pre-work swim at 8 am, very festive and summery because today the swallows under the bridge at my swimming spot have finally returned!
You can't see them in the picture but I can assure you they were there, diving under the bridge where they'll build their nests shortly. :joyful:

At work on the bridge at 9, didn't get quite enough sleep but today I found out that I get paid 165% on sundays so that was quite motivating. :hilarious: Also lots of traffic on the water to keep me busy so it wasn't that bad, and I'll have a couple of days off again now.
Lots of coffee on my little 'balcony' too. (Steel stairs surely leaving a funny checked pattern on my bum to be honest, but balcony sounds so much better!) (Not good at making selfies either. I really can't focus on the screen, aim, and try to hide my concentration in my facial expression at the same time, no idea how others do it.)

Second day of the same meal on the bridge: Stuffed bell pepper reheated in the microwave with zaziki. My aunt came up with the idea of stuffed bell peppers and it works very well. :hungry:

Breakfast was some of the veggie stew I made yesterday. I deliberately made a really big pot of it and kept some back for myself.

Not sure about the 2nd meal - not the veggie stew anyway - have to remind myself not to overdo the veg. Maybe something cheesey but low carb. Cheese omelette maybe.

The blinds man just phoned and apologised for the mix-up over Friday's non show. Some lack of communication over dates. I still think they could have phoned before this, but never mind, he is coming this afternoon. That means the furniture has to be moved out of the way again, and all the PC bits and pieces disconnected. That's why I'm taking my last chance to get online before being cut off again.

The stuffed pepper looks good - what did you use for the stuffing?

Minced meat, onion, mushrooms, a little leek, all fried in frying pan before stuffing the peppers. Added spring onions at the end.
I zapped the peppers in the microwave until they started to get just a little soft before I filled them to make sure they'd be soft after reheating, I like my peppers done, not raw.

I now have blinds at my kitchen windows. It only took about half an hour once he got started. Kitchen all back to normal - well a bit more tidy than normal, to be honest. PC all set up again and no glare behind the screen! The blinds actually take up more space on the window than I had realised, cutting out a fair bit of light, if they are pulled back but pulled across the window and turned to 90 degrees to the window, they're fine and give a very interesting effect to the light in the room.

Not really, that's all there is to it!
I was just going to do steak and mushrooms only and has started cooking them, when hubby asked for fries too, which take 20-30 minutes in the air fryer, so I just turned the mushrooms right down and let them carry on cooking. They exuded quite a lot of juice so when I added the cream I turned it up to bubble down until thicker/evaporated. Added ground Pepper to taste. Simples

B: a bit of cold salmon with the good third of a small avocado
Walk with a friend. The bluebells are out and smelling gorgeous!
L: more cold salmon, with mayo and a bit more avocado
Gardening , rewarded with a small ice cream.
D: 2 eggs scrambled with a bit of chorizo, 2 good chunks cheese

Just about to have breakfast - the last of the veg soup/stew from Sunday.

I've only had coffee for the last 2 days and it seems to have worked at keeping my BG within bounds but it hasn't helped at all with my bladder, so I'll have to buy some decaff coffee and see if that makes any improvement.

2nd meal will be spiced minced beef with cabbage and tomato.

Neil bought some leaf tea for me today so I am experimenting with that. BG right now is 6.2 so I'll check before long and see if it shoots up on the strength of the cup of tea I've just made.
It didn't. It actually came down to 5.5 before I had a snack (RyVita and ham). A bit more complicated to make, of course but not sure that it is ideal because it isn't decaffeinated which I am supposed to be drinking.
