Breakfast: Cullen skink.

2nd meal will be okra and other veg stew.

Everything ready made, so no hassle today.

I was going to put that 2nd chocolate cake in the freezer for future use, but Alistair turned up with some sewing that DIL had done for me (that's her third job - seamstress) and I feel I should pay her for doing it for me. However, she had given Alistair strict instructions not to accept payment, so I gave him the cake instead.

Me too. As long as I don't go hypo, I don't need to eat just because I'm getting hunger signals. If I get teary or shaky then it's time to find food.

Today breakfast is leftover frittata, and salt and chilli chicken if I can face it (I'm not a natural morning eater but meds need to be taken with food)

Probably no lunch unless I can't manage the chicken now.

Dinner will probably be roast pork, no idea yet which veg as hubby is popping to the shops today. Likely to include roasted mushrooms and some other veg that just can be chucked in the pan with the meat. I've requested courgettes but last time sainsburys only had two sorry-looking ones in stock. Asparagus would be wonderful!

B: 1 egg. Only one because I forgot to buy any when shopping yesterday, horror!:arghh:
L: out while shopping with a friend. A large slice very well filled spinach and feta pie. Made with filo pasty I tried to leave most of the pastry but kept nibbling. Accompanied by a rather splendid cauliflower salad with olives and dried tomatoes. Drank tea.
D: 2 lamb chops with hm lc cauliflower cheese. A mini ice cream.

Very tired, I fell asleep in the chair.

Decided to try this chilling of starch idea this morning so made porridge last night and left it in the fridge to have for breakfast this morning. I do like porridge, but it doesn't like me usually. At least my BG doesn't do well on it. We shall see.

I still have a lot of Cullen skink left so that will be my 2nd meal today.

EDIT: 11.00 - BG is OK but I'm hungry. Of course, now, I remember that starchy foods don't satisfy hunger for very long. So I may have to have lunch of Cullen skink and think of something else for 3rd meal.

Hubby is very keen on making resistant starch at the moment, mostly so he can still cook the rice and pasta dishes we like. I'd rather he did the carbs separately so I could just have sauce but he prefers things like risotto where it's all mixed together.

Not eaten yet, I don't like eating in the mornings and planning now to take meds with normal meals rather than eat to the ridiculous schedule dictated by rubbish GP.

Meals today will be a mixture of leftovers and whatever we can scrape together as waiting on a big shop. It's salad weather and I think we still have some tomatoes and a wrinkly half cucumber. Add a tin each of tuna, mackerel and olives and that's one meal sorted...

My family took longer to adjust to the changes than I did, probably a year or even 2 longer! I think it's more relatable when it's you affected, and they just want things to be "normal".
Over time though they are now much lower carb than they used to be. What helped was them seeing the massive positive changes in me. I lost 2 stone and an happier, peeing far less often.

B: full fat greek yoghurt with seeds and raspberries.

Then off to session 1 of my preventing diabetes course, 5 years after diagnosis. Not expecting to learn much, just mildly interested to meet other local people. Presenter was better in person than she was in the phone. A very mixed group of about 30, most over 60 I'd guess. Wide range of body shapes and ethnicities. Very much an introduction using national slides. Verbally she said type 1 is only in children, or up to 21! Generally promoting small changes and improvements in sleep, stress and activity. No mention yet of what the food changes will be.

My biggest gripe is 11:30 to 12:30 which impacts right in the middle of the day. 13 sessions over 9 months! I know I can't do at least 4...

Home for lunch of corned beef slices and several olives.

Mid afternoon a small ice cream. Boy its hot weather! And I have gardening that needs doing, but not in this heat. Not good for the plants.

D: a chicken breast with half an avocado , mayo and a spoonful coleslaw

Please show her this. (And tell her that this doesn't even include all the misdiagnosed 'T2's on insulin' who were diagnosed between their 40's and 90's.
Finding out you don't have T2 is often initiated by the patient, not their hcp, and if people are told very early on that T1 is impossible, chances are they'll never do the research on it if things don't add up with their treatment.

I haven't posted on here in ages, I'll try to do better!

I've been working on the bridge for a good 3 weeks now, and it's still going well!
I enjoy my days on the bridge, and so far I've actualy eaten better on the bridge than at home. :hilarious:
I guess this has to do with absolutely having to plan my meals beforehand and taking them with me, where at home I can decide I'll just improvise with whatever I can find and go for groceries tomorrow. Which often means I end up eating a LC sandwich or one of those fish things from Aldi and nothing else.

I've worked on monday and tuesday, still struggling to get enough sleep before working days so today was a very lazy day where I didn't do the planned shopping and had two slices of LC toast for dinner. One with ham and eggs, another half slice with butter and marmite, and the last half with blue cheese.

Yesterday I had friends with their daughter visiting my bridge. Nine years old is the perfect age to be delighted to press all the buttons to operate the bridge, so she did 3 times! The only buttons I kept for myself were those to let the barriers for cars and bikes down, those are the ones where things can go wrong.

Cleaning tomorrow, first time in almost 3 weeks my help is coming, so things have gotten rather out of hand between the new job and household chores. We'll have to do a lot, including the bed just in case, I'll have a date on friday!
We'll go sailing so I don't expect to need a clean house, but you never know...
No I really shouldn't, I work on saturday and sunday but still. So far we've only communicated through sms and he hasn't even seen a picture of me, but the conversation has been very enjoyable. And this one's looking for a serious relationship so I'm rather nervous.

So instead of preparing meals for the weekend on the bridge on friday afternoon I'll bring a brown block from the freezer to work for the weekend. Found one labeled 'stew-very good'. No idea what it is but I suppose it's very good and it should get me through the weekend. :hilarious:

I hear you, and I knew she was wrong. Turns out she's an ex teacher employed to deliver the course. She'd not a health professional so can't refer or change meds or anything.
I'm not going to bother correcting her on this one, picking my battles as I'm sure there'll be more as the course goes on. It's only for those prediabetic, hba1c between 42 and 47 so doubt we've any misdiagnosed t1s, or even anyone on insulin. Will keep it in mind though.

"We T1's start out as prediabetics too. Which can last for quite a while with the sometimes slow progress of LADA."

Antje. How can you tell if the medics have got it wrong and you are T1 and not T2 after all? As you know by now, I'm on insulin for T2 but have never had any information on using the insulin - just, there it is, take this one once a day in the morning, this one before meals and not any other time. No advice on correction dose if BG goes high - actually no mention of it being a possibility, no mention of diet to control BG, rather advice to eat a low calorie, low protein, fairly high carb diet.

I did ask a GP to check that I am producing some insulin (he had never heard of the test and had to find out about it first). He came back with the result that I am producing insulin but not using it. Still, injected insulin does seem to have an effect which my own doesn't. This may all have something to do with an apparent mitochondrial disease, which nobody seems to know much about either. So, I wonder, is this some other type of diabetes, as yet not mentioned to me (LADA has never been mentioned, nor anything else other than Types 1 and 2, although I gather there are more types being discovered now).

I have an appointment with the diabetes nurse tomorrow, so will ask her about this and see if she has any clue what I'm asking about.

So glad the job is going well and you are enjoying it, after all the nervousness before you started. Also glad to hear you have a date on Friday - have fun.

I first started low carbing in 2016 so some of it has rubbed off on the rest of the family - meals do not automatically contain a starchy carb any more. In fact now my daughter's gone back to uni, my husband is more amenable to preparing low carb meals, as long as he can make himself a sandwich for breakfast (doesn't bother me, I rarely eat in the mornings anyway) Trouble is, their treats/ comfort foods are still based on refined carbs.

To get back on topic, today I have eaten

Meat salad - frikadellen (german meatballs), sauerkraut, gherkins, capers, mayonnaise, wholegrain mustard

Garlic butter prawns with spinach mornay, cup of curried chicken soup

Need to eat in about an hour with meds so will have a yogurt and either some mexican bean salad or "supergreen" salad (lettuce, broccoli, white cabbage, cucumber and edamame beans with sour cream and herb dressing) Both need using up, so I'll have the other one tomorrow.

I've been wondering about your type of diabetes ever since I've met you on the forum, years ago.
More so after you started to grow bold with your insulin and decided to follow a typical T1 approach, combined with low carbing.

Your diabetes seems to behave remarkably similar to my own, and neither of us fit the typical T1 or T2 patterns.

However, from what I read, you are keeping very decent numbers most of the time, and I think that's the most important part.

Maybe more tomorrow, I'm on my phone in bed and about to turn off the light.
