I'm having to think about different soups for future use.
A friend of mine introduced me to his "3 veg soup". Choose any 3 veg plus onions, chop, add stock, simmer, blend. Hubby likes to make "orange soup" variety with butternut squash, carrot and sweet potato. If not serving to vegetarians it's delicious with a bit of crispy bacon crumbled in.So far, I have come up with C-a-leekie, Cullen skink, leek and potato, minestrone, lentil, mushroom, onion chowder, cream of chicken, tomato. I don't usually make cream of chicken, chowder or mushroom soups, so will have to practice a bit before they get added to the list. Each time I will be making a vegetarian and a meat/fish based soup, so will have to think of a few more to allow some variety.

Another family favourite is chicken with kale, ginger and turmeric. Think recipe originally came from bbc website, we use them a lot.
I'd pick 4 or 5 that you like and are easy to do, then rotate them. No one will notice as ots always so much nicer to be cooked for, they will be grateful whateverBreakfast was another protein bar and a cup of tea. Amazing the difference that "full fat" loose leaf tea makes to BG.

I seem to be eating loads more eggs now I'm counting carbs again, hope I'm not overdoing it. Budget doesn't allow for meat every meal, and pulses are too carby. Are there any other cheap protein sources I could try?
Cheese - doesn't have to be expensive cheese. Offal maybe - that is usually fairly cheap. Nuts - again some are cheaper than others. Could buying "in bulk" be cheaper than smaller amounts, eg a whole chicken instead of legs or breast - portioned and stored in freezer.Yesterday I had

There is going to be a ceremony to mark VE day on Thursday evening in Stornoway. I shan't be able to go to it. Sitting for a couple of hours in a cold carpark beside the harbour, in a wheelchair, is not a good idea, sadly. 1 scrambled egg with lots of ham and cheese. 1 small brownie. That's all the "celebration goodies" gone now. Think the whole village was drowning in cake.

For next time, you could use one of those weekly tablet organisers. Put a pen needle in for every day of the week so you can see if you took it or not.I can't remember if I took my basal insulin this morning. I was pretty groggy when I came through to the kitchen and fell asleep in the chair almost immediately. I thought I had taken it, but can't remember actually injecting it.
Simplest is the add an egg to beef mince then push it into a greased tin and bake.I think I'll want to make a meatloaf to eat on the bridge this week. I must have made meatloaf at some point, a long time ago, but I don't quite remember.
So what are your tips on making meatloaf? Specifically one with very little work, nothing fancy...
