"What have you eaten" Parallel Chat

Breakfast was another protein bar and a cup of tea. Amazing the difference that "full fat" loose leaf tea makes to BG.

2nd meal will be chicken tagine.

I'm having to think about different soups for future use. We have agreed to have a fortnightly prayer meeting at my house (not easy for me to get to other houses) with a few women. We will start at 10.30 am and finish at 11.30. That will be time for an early lunch for everyone of soup and a roll (for the rest, not me) before they all head off home. So far, I have come up with C-a-leekie, Cullen skink, leek and potato, minestrone, lentil, mushroom, onion chowder, cream of chicken, tomato. I don't usually make cream of chicken, chowder or mushroom soups, so will have to practice a bit before they get added to the list. Each time I will be making a vegetarian and a meat/fish based soup, so will have to think of a few more to allow some variety. I do have an onion recipe which Antje put on the main "what have you eaten" thread, a long time ago, so will add that to the list.

I'd pick 4 or 5 that you like and are easy to do, then rotate them. No one will notice as ots always so much nicer to be cooked for, they will be grateful whatever
 
Breakfast was about 10:30. I was trying to make some egg warps to freeze or use later in the weekend, but made them too thin so I had to eat them, like a pancake. Made from 2 eggs and a very generous spoonful of cream cheese. Then I had a 3rd egg as I was hard boiling some but forgot to set the timer so had to try one see if it was done.

Lunch, at a garden centre. Watched hubby eat sausage sandwich with extra chips and a piece of cake. Had a few taster bites and a large pot of tea.

Quiet afternoon as too hot to garden, but headed out again at 17:30 to lay the truf we'd bought.

D: one hamburger with cheese om top, with half a carrot and green beans. Small icecccream with 1 sq hm lc rhubarb cake.

8pm ran an errand.
Now finally stopped for the day. Celebrated with a brandy and soda. First alcohol of this week (trying not to drink every day)
 
B: 2 poached eggs on 2 slices livlife toast (latter from my dwindling stash in the freezer)
Mid morning 1 proper brownie. Village had 2 community events going on, both offering tea and cakes. I resisted and resisted until it was too much)
L: 3 chicken drumsticks
Active afternoon setting up for another event tomorrow
D: takeout curry with friends. My main was tandoori chicken, but also had bites of 2 lamb dishes, a prawn dish and 3 bites garlic naan. 2 glasses red wine.

It's only when I type it all up I see how many carbs creep in. Too many, as my waistline testifies.
 
Cold chicken for breakfast. I thought it might be enough, but it wasn't. Very hungry these days but not sure why. Anyway, followed with 2 small crackers with Dairylea cheese, then a Trailbar that I found in the cupboard. Still hungry, but must stop this!

2nd meal will be pork ragout, which is ready cooked, so no reason not to have it.

Olives, chicken & leek in cream sauce, asparagus and breaded oyster mushrooms (without the sticky sauce so not too many carbs)

Egg mayo with cucumber batons

I seem to be eating loads more eggs now I'm counting carbs again, hope I'm not overdoing it. Budget doesn't allow for meat every meal, and pulses are too carby. Are there any other cheap protein sources I could try?

Cheese - doesn't have to be expensive cheese. Offal maybe - that is usually fairly cheap. Nuts - again some are cheaper than others. Could buying "in bulk" be cheaper than smaller amounts, eg a whole chicken instead of legs or breast - portioned and stored in freezer.

Drank only tea.
At clear up time had half a chocolate muffin we were given a as a thank you

1 scrambled egg with lots of ham and cheese. 1 small brownie. That's all the "celebration goodies" gone now. Think the whole village was drowning in cake.

2nd meal will be more of the pork ragout with some chilled and reheated dauphinoise potatoes.

I can't remember if I took my basal insulin this morning. I was pretty groggy when I came through to the kitchen and fell asleep in the chair almost immediately. I thought I had taken it, but can't remember actually injecting it. I certainly thought about taking it. BG is in the 12's. I will have to use bolus doses to try to keep it under control.

Are any of you going to VE day events?
There is going to be a ceremony to mark VE day on Thursday evening in Stornoway. I shan't be able to go to it. Sitting for a couple of hours in a cold carpark beside the harbour, in a wheelchair, is not a good idea, sadly. I know those people in the war made huge sacrifices, but I'm afraid I can't match it.

For next time, you could use one of those weekly tablet organisers. Put a pen needle in for every day of the week so you can see if you took it or not.
 
I think I'll want to make a meatloaf to eat on the bridge this week. I must have made meatloaf at some point, a long time ago, but I don't quite remember.
So what are your tips on making meatloaf? Specifically one with very little work, nothing fancy...

Simplest is the add an egg to beef mince then push it into a greased tin and bake.
Can add onion, herbs or other flavourings to taste
A carbier version adds breadcrumbs as a binder, soem low carbers add crushed pork crunchies or milled seeds instead, but I find its OK without.
Or there @LivingLightly s mushroom and walnut loaf for a veggie version. Think it's on my cmt

Pork or turkey mince also work but need stronger seasoning. Agree no need to add anything other than egg to bind, as long as you don’t mind it being a bit crumbly. Diced onion will make it fall apart even more so you could use onion powder instead.

Versions I have enjoyed include

Pork with fennel seeds

Beef with oregano, parsley and sliced green olives (my mum uses pimento stuffed ones but you have to slice them yourself, she'd also add diced bacon)

Grated strong cheese can liven up mince (my mum uses mature Edam but Parmesan would probably work too).
