"What have you eaten" Parallel Chat

Slept late. Just had breakfast of cooked, chilled and reheated risotto. We'll see if the starch has become resistant or not.

i had what I figured was a sensible portion, but am still hungry. Hoping to stave off the hunger with tea.

2nd meal will be the 2nd potato cake with cheese sauce on top (kind of rarebit) with some salad or other veg - depends what I can find in the fridge.
 
I haven't had it yet, but I've made a thick cheese sauce to put on the potato cake. It should have been made with double cream but Neil has started building a frame for my recliner chair and he has wood and tools all over the hallway, so I can't get to the big fridge to get it out. I have substituted a can of coconut cream and mixed it with some onion powder, some Dijon mustard and a pile of Cheddar cheese. It looks OK. I'll put it on top of the potato cake with some tomato and some tenderstem broccoli and toast it.

Cooked and chilled rice seems to work as well as potato to avoid huge spikes in BG. It did rise, but was well under control. Trouble is - if I do that too often, my weight will rise, so it will be a once in a while treat. I do like risotto - especially if it is finished off with Boursin cheese. But the rest must go into the freezer for special treats.
 
I'm having chicken with resistant starch rice and broad beans for tea - I keep forgetting about my frozen runner beans from the garden so must use some of those next time. I might make a big stew with minced beef, swede, carrot and runner beans this week. I tend to overcook the vegetables when I do them in a slow cooker stew so I'll try to not do that this time!
 
Breakfast was a different kind of small and carby than the usual, lunch was ham salad and tea is cheesy beans and sausages.

I'm still not ready to have anyone come into my house to do the plumbing and repairs, so I've been re-sealing the shower again today. I'm not very good at it! At least I did a deep clean in the bathroom while I was at it. I'm out to lunch tomorrow with a friend
 
There was a little bit of the risotto left from a couple of days ago which wouldn't fit into the box of it that I put in the freezer, so I just had that for breakfast today.

2nd meal will be home made sliced beef sausage with some broccoli and cheese sauce.

Yesterday was bad. I was paying the price for trying to do stuff the day before and all the pain came back, as well as some new ones in my chest - all muscular, I'm sure. Spent most of the day in my "new" riser/recliner" which the local Community Equipment" people brought out for me to try. It's a loan so that I can see if it will help before I buy one for myself. They also brought out a gadget that goes under the mattress on my bed to raise the top and help me get in and out of bed. It's not much good because, I think, the mattress is too thick and too stiff. However, they did also put a little handle on the right side of the bed, so I can get in and out of that side, so save laying too long on my left side. Slept for about 3 hours that way. Then another couple of hours in the chair.
 
I fasted in the morning then had a ridiculously large portion of fish and chips which was gorgeous. I also had a dessert! I'm going to have a ham salad for tea.

Edit - the fish and chips and dessert was at a pub with a friend
 
An odd thing. For the last few days I've felt a bit breathless and have checked my oxygen levels. They have been fine but today, suddenly the meter shows that my pulse rate has dropped down into the low-mid 50's from my usual upper 60's-70's. I don't know if this is something to do with resting so much, or something going wrong. What is really odd is that, this only happens when I am sitting back in the new chair. Just now, sitting at my desk, it is 71bpm. Can a chair do that?

I couldn't find the beef sausage that I made so just had broccoli and cheese sauce. Only had half of that, so I will have to finish it tomorrow, maybe for breakfast.
 
Just back from a GP appointment! How about that? Lungs still crackling so another blood test and chest XRay required. Vitals all good though, so it can't be all that bad.

Avocado for breakfast.
Lunch will be the remaining broccoli cheese.
Last meal will be poached chicken with shredded Brussels sprouts and carrot.
 
Breakfast was baked beans and sausages, lunch was egg mayo with salad, and tea was a few triple cooked gastro chips done in the air fryer - I'm feeling a bit off and didn't fancy cooking anything. I have a slightly raised temperature and a scratchy throat, just hoping it's not going to develop into anything nasty.

I'm sending myself to bed to watch you tube channels and dream of spring!
